SANDWICHES

I’m goin’ to invite my friend for tea.So plzzzzzzzz share some great sandwich recipes.

Chicken sandwiches:

Boiled and shredded chicken breast
1 hard boiled egg…shredded
A few leaves of lettuce shredded
Salt and pepper to taste
2-4 tablespoons of mayonnaise
1 teaspoon mustard paste (the yellow one)
a few dashes of hot sauce.

Combine the shredded chicken, shredded egg, shredded lettuce, salt/pepper with the mayonnaise and mustard and mix well. Add a few dashes of hot sauce and mix. Spread filling on one side of bread, top with other bread. You can cut in triangles.

Cucumber Sandwiches**

2 (8 oz.) cream cheese, softened
3 med. cucumbers, peeled, grated & squeezed in paper towels to remove water
1 sm. carrot, peeled & grated
1/2 c. mayonnaise
1 tsp. garlic salt
2 tsp. seasoning salt
2 loaves bread, freeze, then cut off crusts & half or quarter slices
Mix all ingredients with mixer and spread onto bread slices. Chill so that the cream cheese mixture “sets”.

**OLIVE - NUT MIXTURE FOR FINGER
SANDWICHES **

8 oz. cream cheese, softened
1/2 c. mayonnaise
1/2 c. finely chopped nuts (pecans)
1 c. chopped pimento stuffed olives, well drained
Dash of pepper

Blend the softened cream cheese with mayonnaise until very smooth - no lumps. Stir in chopped pecans, olives and pepper. Mix well, cover; place in refrigerator overnight. Set out at room temperature for about 1 hour until ready to use for little tea-type sandwiches.

Spread Mayo on the bread.

Filling, Tuna, fire roasted red peppers from a jar, avacado (sprinkle with lemon juice to stop it from going brown), baby spinach leaves. Very delicious and looks colourful too.

Egg Mayonnaise Sandwich:

Boil eggs (you can use as many or as little as you need) once boiled, allow to cool then peel eggs. Mash them with a little mayonnaise and season with salt and pepper to taste.

Tuna and cheese grill:

This is not so much a sandwich but is very quick and absolutely delicious:

Toast bread. Mix tuna, cheese, onions (finely sliced), tomatoes (chopped), season with salt and pepper. Put the mixture onto the toasted slices and grill until cheese has melted and browned.
