samosai

Someone recently told me that samosai are a Gujrati speciality and that they are the first things that Gujrati girls are taught to make.

I know there are a lot of samosai recipe online but I was wondering if anyone knows of a really good one that they have tried themselves?

I love keema ones! My mom just bhoons the keema with salt and black pepper and cooks it with peas and julianned carrots.

Speaking of samosay, she left some in the freezer for us, time for hot fried deliciousness.

My mums are the best.

For the dough, makes around 30:

I (2 kilo) packet of Plain flour and around 175 grams of butter or oil.
If its butter make really fine breadcrumbs first and then add the water and knead away. With the oil just mix it all with a big spoon and then add the water.

It takes forever to get it to a perfect consistency, but its worth it cuz the pastry turns out really elastic and easy to make.:)

OK so I made some samosai using a dough recipe I found online. It was something like:
2 cups all-purpose flour
1/2 tsp salt
4 tbsp oil
4 tbsp water (or whatever is required to make it into a dough)
After you knead it for a while, you shape it into a ball, coat it with 1/4 cup oil and put in a plastic bag for half an hour or more.
Anyway the samosai didn't turn out that good - they taste like qeema in namak parai. Is this because maybe I didn't roll the dough thin enough?
It was really hard rolling the dough because it kept shrinking and I finally managed to make it big enough so I could add the qeema and fold it. I thought it was thin enough but it literally tastes like you're eating qeema and namak parai. :(
