samosa crust

i was wondering how do we make the thick samosa crust? not the thin wraps one used for qeemae ke samoosay…the thick one used for aaloo ke samosay..

i have tried some recipes before but it never comes right :frowning: i tried with maida, maida mixed with besan, whole flour but nothing worked well :bummer:

sometimes its too soft…kabhee samosa talnay mein khul jata hay…aur kabhee bahar se jal jata hay aur andar se kachcha…even tho aanch mein hameshan talnay mein dheemi rakhti hoon… maybe i am missing some ingredient…or using the wrong things… :frowning:

oh and i put some zeera and namak and some very little oil in the mix…is there something else i shud put masala wise in that? aap log oil daaltay hayn is mein ya naheen?

meri arbi roommate ne mujh se bohot purani farmaish kee hui hae samoson kee toh before i leave usa i better make some for her… :biggrin: planning to make them this weekend..

like qeemae ke samosay can i also make lots of these and just freeze and fry later as needed?

also if u have a good recipe for the potato filling plz do share…would love to try different ones for that…

Irem I make the best samosas :D Therefore I am not going to give you my recipe. :D

check the ratio of oil in your mixture .....!!

actually what i do is ......its 4 parts flour(maida) n 1 part ghee ......i never tried oil but i think u can use butter instead of ghee.......

for example.....
1 cup flour
1/4 cup ghee/butter
salt a big pinch
cumin seeds(zeera)......as desired
water to knead

now knead it well but it shouldn't be too soft......cover n refrigerate it for 3-4 hours .......n then use it......:)

for filling ....i'll say it all depends on your taste ........take boiled potatoes n add spices according to your taste .........salt, red chillies , chat masala , whole dhania , zeera, green chillies., corriander etc. etc.
u can add onions too.... if u like .....

n by the way you can use some chicken stock with water to knead the flour ........i often do so n its yummy.....:)

interesting recipe :k: … i think i may try it … but few questions is “maida” plain flour or wheat flour or what? and isn’t “coriander” and "whole dhania " the same thing or is that "whole dhania " is the crushed seeds and “coriander” are the chopped leaves? :help: … thanks in advance … :slight_smile:

maida is all purpose flour…white in colour…though it comes from wheat but generally wheat flour is the brown one

corriander n dhania r same but when i said whole dhania i meant seeds n fresh green corriander r leaves …:slight_smile:
