How do you make it??I know the basic ingredients are tomatoes, jalapeneos, onions and cilantro. But do you cook it?
Are you trying to make the bottled kind you get in stores or the real thing, which looks something like pico?

Anyhow, I was looking for something like the bottled kind. I tried the following recipe and it turned out pretty good.
1/2 onion, chopped
2 jalapenos, deseeded and chopped
2 Roma tomatoes, peeled and chopped finely
2 tsp vinegar
salt to taste
Cook all this with a sprinkle of water until the veggies are somewhat crunchy. Cool and pour into jars.
I forgot to add cilantro. I suppose if I add canned tomatoes, they would add to the thicker consistency, like the bottled kind. But this was great too.
Ira, I dont know where you live...but if you are in the US....I used to buy Diced Tomatoes from Rotel and use those in salsa recipes...because their tomatoes come seasoned....I think they even had Salsa Tomatoes....they turn out great...
There are two kinds of salsa that I know how to make, hopefully this will make sense. I measure everything with tablespoons or cups so i hope that doesn't confuse you.
Salsa fresca
1 small onion chopped
2 medium sized tomatoes chopped
3 green peppers chopped
3 tablespoons of fresh chopped cilantro
2 tablespoons of lemon or lime juice
Salt to taste
Just chop all the ingredients up small but not minced, mix in lemon or lime juice and add salt to taste. This is really good served with tortilla chips that are just salted. Or with a burrito.
Guacamole Dip
Ingredients
1 avocado, diced
1 lime, juiced
2 tomatoes, seeded and diced
About 3 tablespoons of green onion, minced or regular white onion
3 cup green pepper, minced
1/2 cup fresh cilantro
Just mix all the ingredients together or you can actually smash the ingredients and have it be a chunky paste like constancy. Add salt to taste. The downside of making anything with avocado is that it lasts only a day, than turns brown. This also is great with tortilla chips or served with a Mexican dish you make.
