I love Salmon!
I like to cook it in its own oils, Salmon is rich in fish fats and meat is tender. Deep frying or grilling is overdoing it. Farmed Atlantic Salmon has a rough texture and lacking in taste. I encourage you to look for Wild Alaskan Salmon sold in Whole Foods stores. Wild Alaskan’s meat is softer and has an amazing taste!
If you do get some Wild Alaskan, make some pan seared Salmon. You are essentially cooking the fish in its own fats. You place the fillet with skin on the pan in hot extra virgin olive oil (very little oil). It’s very delicious.
