Does anybody have a good recipe for salad for large crowd? Something that is quick and easy?

Fruit salad, it’s even easier if you stick to fruits that you don’t have to do much to- like blueberries instead of strawberries

you can keep russian salad, apple & cabbage salad, peas,chickpeas & macroni salad, potato salad, corn and pineapple salad, mix fruit salad, egg & chicken salad.
you can search the recipes and can keep the mix of the ones you find easier to make.

My mom usually gets the premade salad packs and adds cucumber, tomato, carrot, and radish to it. She once added green olives too. Add whatever vegetables you want. Squeeze some lemon juice, give it a toss and you’re good to go. And that’s a simple and quick salad.

Or get a premade salad pack with dark green lettuce (not iceberg) and you can toss in other veggies like tomato, radish, cucumber. Throw in some cubes of halal feta cheese, croutons or nuts such as walnuts or pine nuts. Lightly season olive oil or balsamic vinegar, etc…and give it a good toss. Don’t fuss over the salad too much.

Premade salad packs (the spring mix that has the fancy lettuces (radicchio, endive etc) add slivered red onion, candied walnuts, crumbled feta or goat cheese, and if you like, the tiny segmented mandarin oranges (you can get these canned and just drain them really well) toss lightly with balsamic vinegarette. This sale is a really nice balance of bitter, sweet, salty. You can add pitted kalamata olives if you like too.

Great ideas. I was going to premade salad packs and toss everything together with some dressings.

I was thinking of putting pomegranate and few different cut up veggies, sunflower seeds, some canned mandarin oranges.

What salad dressing is good. I should add the dressing at the last minute right?

the most simple easy and tasty is kidney beans mix wth corn chopped onions bit of vinegar lemon salt and black pepper just mix and you are done, you can add macroni if you want

or simple mix apple cabbage wth cream and little condensed milk and you are done.

I have two salad recipes that I quite like. One is Greek salad and the other is a bit more unusual but quite good.

Greek Salad

**Ingredients
**
*The amount of each ingredient for the salad depends on personal taste.

Salad
English cucumber
Ripe tomatoes, cut into large chunks
Red onion, sliced as thinly as you can
Kalamata olives
Feta cheese, cut into chunks

Dressing
125ml olive oil
125ml lemon juice
1½ tsp salt
1 Tbsp dried oregano

*Balsamic dressing works nicely with this as well.

Method

  1.  Take a fork and scrape it along the length of the cucumber. This allows the dressing to be soaked up by the cucumber.
    
  2.  Slice the cucumber in half length ways and remove the seeds. Slice the cucumber into thick chunks. Place into a large bowl.
    
  3.  Add all the other salad ingredients to the bowl.
    
  4.  Combine the dressing ingredients and mix well. 
    
  5.  Pour over the salad and allow to marinate for at least 20 minutes but up to 2 hours.
    

Fried Chevin and Pomegranate Salad

Ingredients

Fried Chevin
300g Chevin or other soft goat’s cheese
250ml flour
2 eggs, beaten
500ml breadcrumbs
Oil, for frying

Salad
250ml pomegranate rubies/seeds
100g pine nuts, toasted
Salad leaves
Olive oil and balsamic vinegar, for drizzling over

**Method **

  1.  Slice the Chevin into 3cm rounds.
    
  2.  Coat the rounds first in the flour, then in the beaten egg and finally in the breadcrumbs.
    
  3.  Fry in hot oil until golden brown.
    
  4.  Remove from the oil and drain on kitchen paper.
    
  5.  Serve the fried rounds on the salad leaves, sprinkle over the pomegranate and pine nuts and a good drizzle of olive oil and Balsamic vinegar.

^The pomegranate one sounds interesting; should give it a try one if these days. I’ve had goat cheese before …ages ago…and I think it is a mild sour taste compared to feta, right? I don’t like excess of feta in salads and pasta; too strong.

^Yeah, Chevin and most goat cheeses are milder than feta with a slight sour taste. I’m not keen on too much feta either. However, I’ve found that marinating the feta prior to tones down the strong taste a bit.
