Two cups rice soaked
One and a half cup mixed vegetable chopped finely.
One tomato chopped finely
Two small onions sliced ..
Heat a pan .. add quarter cup oil... wait for it to heat up.. then add zeera seeds half teaspoon... let it sizzle ....
add sliced onions and brown them up ...once browned, add quarter cup water and quickly cover the top so that the onions will release their color.
Add the mixed vegetables and start frying ... add salt ( one teaspoon per cup of rice ) ... some chopped green chillies, the tomato paste .... and whole masalas ( whole black pepper, cloves , cinammon )
When the vegies are dne, add 4 cups water and let it all boil, finally add the rice and let it all simmer low heat .
Whn the water is all absorbed in the rice , put the rice on dum .. and tadaaa you are done..

i dont add whole garam masala in it....i add salt crushed black pepper and cumin seeds.

I don't use tomato or chilli pepper in my pulao. Onion, ginger/garlic, and khara masala or haram masala.

A yakhani may also be bolied for the pulao - with suanf, sabut dhanyia, zeera, sliced onion and whole garlic bulb.
