Saas is allergic to gluten/ Needs gluten free

Hey everyone,

My dear saas has just found out that she has celiac ?SP? disease- she needs to stay on a gluten free diet.

We’re doing a lot of internet research/ wikipedia/google etc. but are not finding that much information from “desi sources.” We need to know what to avoid in Pakistani food. Also, is there any kind of flour that we can make roti/chapati out of that is gluten free? She really misses chapati with salan and is getting sick of just chawal ALL the time.

Can I make her roties out of chick pea flour? Besan ki roti? ANy other types of flour?

Avoid anything which has wheat or wheat products , like maida , sooji , so roti or paratha is out of question etc.
She can eat rice and corn in any amount so substitute wheat ata with corn flour. Makai key roi aur sarsoon ka saag is staple in many parts of Pakistan is liked by all ethnic groups from back there. So makai key roti can be good substitute for wheat bread , desi do not like corn tortilla , I do not like it either. ( No, I do not have Celiac. I am giving you ideas.)
Yes baisan ka ata / chick pea flour can also be used to make roti. You can experiment by mixing corn flour and basin and make roti , try mixing rice flour too, desi stores sell rice flour.South Indian foods use rice flour for making dosa and idli and use them in many ways.

I have had alot of gluten free stuff (cookies, tortillas) and they taste really good. So I am guessing roti will turn out decent too as the tortilla i had was pretty good. For those in Pakistan, Daali foods has started selling glutten stuff even in Lahore (Alfatah, H Karim Buksh)

manorani yes it's the same kind of ata but has the gluten removed. i'm not sure if you can buy chapati ata however, but you can mix two types of ata to make something that looks like chapati ata.
