**they are called…gol paraaThaa [round], chaukor paraaThaa [square] and tikon paraaThaa [triangular]…taste wise they are all the same. paraaThaas can be regular or stuffed, layered or simple and fried in vegetable ghee or asli ghee [clarified butter].
there is one paraathaa that i used to have at Aligarh annual Exhibition [numaa’ish] and that was unique. it was gigantic [at least 2 feet in diameter], very crisp and loaded with asli ghee. i remember my entire family used to eat from just ONE paraaThaa…it was quite a sight to watch them fry those paraaThaas
