Who knows how to make a good roti here?
My nani taught me how to make this really really good roti with milk, fennel seeds, sugar and ghee.
Ohmigosh, it was amazing!

I make spicy potato roti sometimes ...
boil a potato ... mash and mix in salt and black pepper ..while goond'ing the flour , mix this potato in the dough ....and after that the usual roti process .. it tastes good with omelette.
Then there's baisan roti ..
take some gram flour and add milk to it , until it becomes a smooth paste .. add green chillies finely crushed , salt, garam masala and some dhaniiya ... then on a really hot tawa , pour a few drops of oil and with a spoon pour some baisan and spread it on the tawa ... wait for one side to cook and then then other ....yummy

Left over daal ki roti:
Just knead the dough with left over room temp daal and add some zeera and dhaniya/mirchain chopped finely. Yo may not need to add any water depending on how much aata you use. You will need to add a few tbs of oil to keep the dough smooth.
Just roll and cook like regular paratha.
This can be eaten with just butter or pretty much anything...sabzi or qeema or gosht whatever.
Pyaz wali roti:
While kneading the dough, add finely sliced red onion, green chillies, hara dhaniya, zeera, salt and ajwain. Cook with light brush of oil on each side.

My mother makes these amazing “Methi wali rotis”
It’s pretty much Nikki’s pyaz wali roti plus fresh methi, red chilli powder, coarsely ground corriander seeds and 1/4 part (or as much as you like) gram flour(optional) .
Mix all dry ingredients well then add water and knead the dough.Set aside for some time to let it set. Make rotis as usual ![]()

is it just me..? i have been brought up on daal, aloo parathas not rotis.. the kind where u make one roti put daal or aloo on it then put another roti on it and cover the edges nicely and then u put ghee and fry it up.. i never knew u can mix it into the dough, i thot that wud b v v messy considerin the ingredients will fall out, esp if its aloo... no?? :S

NO it's not just you :) The parathas you talk about are quite common too, but the ongoing discussion is about rotis and variations you can make to it.

GOOD! i hope i didnt sound as if i didnt eat roti before.. wot i meant was never roti filled with somethin... u know....! but its nice to see that u can play around with rotis too!!

You are talking about aloo key parathey or daal waley parathey or qeemay key parathey...where things are stuffed rather than kneaded in the dough. Both methods are different and yeild different results.

I think she used to call it Khasta Roti.
2 cups ata
3/4 cup fennel seeds - saunf
milk
2 tsp sugar
pinch salt
2 tsp ghee/oil
Mix all dry ingredients first, then the ghee/oil
Knead with milk until you get the ata to the right consistency
Proceed to make roti as usual...you can have this with butter or any type of salan practically. It is soooo good!
