roasting chicken the right way

i made roast chicken today in the oven, it wasa ctually a recipe from gupshup but i cant remember who posted it, it was really nice!!!

i marinated it in youghurt, lemon, honey and some spices and then wrapped it in foil with some potatoes and peppers and cooked it in oven on 220 degrees, however the chicken didnt go brown from the outside although cooked from outside and also there was alot of excess water in the dish ???

has anybody had this same experience ? how do i get it right for next time?

devoted i roast the chiken in oven but i dont cover it with foil, usually roast it in oven bag,and waste the excess water. try to dry it as it can .and for browning from outside u can put it on grill for few min after roasting. but mine becomes brown from outside during roasting.

Re: roasting chicken the right way

i usually just set the oven to broil...and it's either high or low...depending on how close it is to dinner time. i also place the chicken in the middle rack...so it doesn't burn. you need to turn it only once though...half way there. the whole cooking time shouldn't take too long. umm...about 45 mins or less...if it's on broil high. just to be sure its done, at the half an hr point, take one out and check to see if its done. and since you're not covering it...itll brown nicely.

the chicken will leave some water and oil. and since you've got some yougurt, that's going to leave it's water as well. just get rid of it once you're done cooking.

oh btw...this is for chicken pieces. not the whole chicken. that takes longer...and bake it at around 350 celsius.

NO dont get rid of that water,,gravy bana layin na uss ki..just add half t spoon of mayda and half t spoon of butter in that boiling left over water and cook it ,until its thick,,
