Im pretty clued up on marinating roast and cooking it…but yesterday bought a whole chicken from tescos coz they had special offer apparently…
now…how the hell do i marinate and cook it? Do I need to make slits in it like i do with normal chicken roast? do i marinate it normally like I would? Does it have skin to remove? (Its frozen and packed-so I dont know!!)
How do I roast it? In a big roasting tray and for how long?
Will it get cooked fully within..?
my hubby reckons I wont be able to cook it…so I take that as a challenge
There are tons of recipes and cooking methods online, depending on how you want it done. It's pretty simple though. Whole chickens usually come with skin on. It's supposed to help in keeping the chicken moist while cooking, so I'd suggest not to remove the skin. You could always remove it just before serving. You can use whatever marinade you like. You have the option of cooking it stuffed or unstuffed. For stuffing you can use regular bread stuffing, or rice. So yeah, there's lots of options. As for how long to cook, the recipe you use will tell you how long to roast for. If you have a meat thermometer, you could always use that for your peace of mind.
The way I make my stuffed chicken: Make small slits in the chicken. Rub melted butter all over. Sprinkle salt, black pepper, and lemon juice. Rub well. Leave overnight or at least a few hours. For stuffing I use veggies and parboiled rice. Boil the rice until it's three quarter done. Chop veggies (baby carrots, celery, mushroom, green/red peppers, etc.) into small pieces. Add your spices (salt, black pepper, pepper flakes, oregano, rosemary, thyme etc.). Squeeze in some lemon juice. Mix everything with partially cooked rice. Stuff rice into the chicken cavity. Spread the rest of rice/veggies mixture around the chicken in your roasting pan. Cover loosely with foil, or use pan cover. Bake at 375 degrees for 40 minutes to an hour. Increase temp to 400 degrees and cook for an additional 15 minutes, or until your thermometer reads 170 degrees.
u can roast whole chicken or steam it as u like
here is the recipe i use to steam it in haandi :D
yougurt 1 lb ,454g ya aik dabbi :)
lemon juice 5 tbsp
red chilli powder 2 tsp
tandoori masala 6 tsp
salt 1 tsp
garam masala 1/2 tsp
dhanaya powder 1/2 tsp
olive oil 5tbsp
water 1 cup
u can add ur own spices
marinate chicken, except for oil ,leave it for 2 hrs or so..
put this chicken in haandi or steamer which ever u preffer add oil and steam it for 2 hrs
my hubby loves this chk .i usually boil vegg with it n small baby potatoes

I use this recipe; it's not very desi but people generally love it. Warning It contains quite a bit of lemon, so if you're not keen then you can adjust and reduce the amount
Take one chicken with skin and wash thoroughly inside and out.
Place in the oven tray you are going to cook in and make cuts all over
Take one lemon and thinly slice into circles. Cut each circle into quarters, now carefully lift the skin of the chicken and place these thin lemon places UNDERNEATH the skin, spread evenly all over the chicken i.e. the lemon is between the chicken meat and the skin
Take about 30g of butter and mix into it 1 tsp of mixed herbs and 1 tsp of fresh garlic paste. Also place half of this under the skin of the chicken and the other half inside the cavity of the chicken
Now take another lemon, cut it into eight pieces and stuff this into the cavity of the chicken
The masala consists of:
4-6 tblsp peri peri marinade
1 tblsp tomato puree
1 tsp salt
1 tsp black pepper
2 tsp nutmeg powder
a few tblsp oil
1 tsp mint
1 tsp sukha dhaniyah
1 tsp zeera
chilli powder if you wish
2 tblsp lemon juice
1 tsp mint sauce
Mix all of this together and then massage into the chicken
Marinate overnight and then roast in a medium oven for about an hour

Put the chicken in a steamer or put a big strainer upside down over boiling water in a
pan and put the chicken over it. Cover it and let the chicken cook in steam for about 15-20
minutes check if its done if not leave for another 5-10mins...
You can also do a simple lemon/herb marinade, comes out pretty good. My herb of choice is basil & oregano, you can go with a little bit of rosemary & thyme as well. Basically wash chicken well & pat dry. Coursely chop some cloves of garlic (3-4) , add juice of 1-2 lemons, and add in fresh herbs at the end. Add a bit of olive oil. Rub this in between the skin and meat & also apply to the outside. Make sure to add salt pepper or even hot pepper if you like. Let it marinade a few hourse. Place in baking tray, cover tightly with foil. Bake about 45 minutes until tender. I usually uncover and let it brown a bit after it is tender. Comes out pretty good. Sometimes I sprinkle a little cajun spice on the outside.
