Cut them in large cubes .. like one medium sized potato in 4 cubes ..
then mix in them one tablespoon olive oil and half tsp garlic powder ..
Place baking paper on the tray and spread these potato pieces on it .. now sprinkle some salt, dried herbs, corriander powder , red chilli pepper, chat masala on them .. pop them in the oven.. they should get done in no time :@:

I like it spicy , so I mix in half tsp imli sauce too when mixing olive oil and garlic powder ..

^I usually do something similar, but without the garlic paste, and the issue for me is that the potatoes always get stuck to the tray and start burning (I do line the tray with foil and brush oil on it too). And then if I move the potatoes around with a spatula halfway though to prevent burning, the skin just remains stuck to the tray and the potatoes get broken... how do you prevent this from happening?

Grey, use a baking sheet .. foil wont help.. baking sheet helps the potatoes roast nicely and they dont stick to the pan either ... and you wont have to oil the paper either ! believe me it gives excellent results when it comes to potatoes ..

nope i dont .. I let them slow roast in the oven .. takes about 20 minutes for them to get done .. sometimes slightly more depending on the type of potatoes ..

no boiling neccessary....i do it just like CB says..only i slice them in wedges instead of cutting into chunks/quarters...if you use a nonstick cookie/baking sheet, no problems with sticking...400-425 degrees usually does the trick!

yup wedges come out even better coz they spice better ... but i normally use skewers so i cube them ..

I cut them up, boil them a little (5-10mins). Warm olive oil with whole garlic cloves in the over. When potatoes are par boiled I drain them, add salt and paparika and shake them around a little, add them to the hot oil and then leave them in the oven until they crisp, and they are yummy!
