alrighty, I once had roasted/fried potatoes, and they were madiliciously good…
I have no idea what they are called… anyone ever tried?
I tried marinating potato, cut in fours, just like you marinate chicken, and then put them in the oven… but the taste wanst the same..I covered them with Al. foil, so they dont turn out all dried.

I dont know the proper term for them, but someone ordered them for me and it was part of a vege. plate.. I tried asking the person, but they dont know either..
To make delicious roasted/fried potatoes what I do is:
Cut potatoes into small chunks and fry them very slightly just so that the skin turns a light golden and the potatoes aren't fully cooked.
Then make a bag from some foil and put the potatoes into this, sprinkle some salt and black pepper and then seal the foil bag and place in a pre-heated oven.
Cook for about 15 minutes and then remove from the oven but not the foil bag. Only remove from the foil bag once you're ready to serve!
You can even sprinkle a little olive oil before placing in the oven
I rub the potato wedges with plenty of oil and coarse salt (or herbs such as rosemary) and put them in a greased pan along with whole cloves of garlic (about 2-3) and they are divine!
I make 'em for my girls and they absolutely love 'em.
I use a baking dish with foil inside enough to fold over and cover the potatoes.
Coliban potatoes ( i think they are commonly known as washed potatoes) are the best for it,
Wash 'em properly then cut them in big chunks, add the potatoes to the dish, pout a bit of oil and then sprinkle potatoes with salt, pepper and Oregano.
Cover the potatoes with foil and bake 'em for 40 mins at 200.
OR if Im making Roast chicken I add the potatoes to the dish, just love how the juice from the chicken seeps into the potatoes .
I slice the potatoes in thick wedges with skin on and par-boil them. Then run a fork lightly over the cut sides to give a groove look. Pour mixture of olive oil salt pepper paprika and herbs and put them in oven for 15 mins or so until skin gets a slightly charred effect. They taste and look yummy.
wanna be mum, i used your way of making potatoes and htey were totally delish! Thanks so much for sharing. I usually just sprinkled with salt pepper and italian seasonig and oil and roasted them but they tasted better this way.
