**Lemon Rice

****Ingredients :
**Oil 3 tsp.
Mustard seeds 2 tsp.
Curry leaves 8-10 nos.
Channa dal 2 tsp.
Urad dal 2tsp.
Red chilli 3-4 nos.
Chopped ginger 1 1/4 tsp.
Chopped green chilli 1 tsp.
Chopped onion 1 no.
Peanuts 2 tsp.
Turmeric powder 1 tsp.
Rice 2 cups
Lemon 1 no.
Salt To taste
Chopped coriander leaves 1 tsp.

**Method:
**1-Heat oil in a pan and add mustard seeds, also add a few curry leaves.
2-Now add chann dal, urad dal and red chillies. Stir till dal is light brown.
3-Add chopped ginger and green chillies. Also add chopped onion.
4-Add peanuts, turmeric powder and also boiled rice. Mix all the ingredients properly.
5-Now add lemon juice and salt. Finally add chopped coriander leaves.
6-Lemon rice is ready to serve.

**chicken tikka biryani

***Ingredients*

  • 1 Kg Chicken boneless cubes
  • 3 1/2 cups Boiled Basmati rice
  • 1/2 tsp Chilli powder
  • 1 pinch Turmeric powder
  • 1/2 tsp Coriander powder
  • 3 Pc medium Onions, finely chopped
  • 4 Pc medium Tomatoes, finely chopped or pureed
  • 1 Pc Spring onion, finely chopped, leaves only
  • 4 Pc Green chillies, finely chopped
  • 4 Tbsp Green chillies, chopped and fried
  • 1/2 tsp Ginger Garlic paste
  • 2 tbsp Coriander and mint leaves and few for garnishing
  • 4 tbsp Butter or ghee
  • 1 pc Salt to taste

    Cooking Instructions

    Preheat oven to 180aC.
    

    Heat, butter / ghee and fry onions and ginger garlic paste until golden brown. Add tomatoes and all seasonings. Stir till the ghee separates from the gravy and it becomes thick. Add spring onion, chicken pieces, coriander and mint leaves and green chillies. Cook for about 8 -10 minutes. Set aside.
    Grease a large pan with heated ghee. Spread a layer of half the chicken, sprinkle with the coriander and mint leaves, cover with half the rice. Repeat the layers omitting the mint and coriander leaves. Garnish the rice with fried Qnions, coriander and mint leaves. Cover with aluminum foil. Put in a preheated oven for 10 - 15 minutes.
    Serve hot with raita.

lately i have been having "Spanish rice.... for those who may be familiar with it..i use Goya instant rice mixes (well til i figure out how to make it from scratch or get bored with it :D)... mmmm!

Quickest recipes for rice?

my own recipe.

Boil any amount of rice to 1/2 kani that you want without adding salt , just add some oil.

Then take the ginger garlic paste approx 1-2 tbsp (depending upon qty of rices) that u use for normal cooking and saute in some oil then add the boiled rice in it mix well , add salt mix well and put on daam for 10-15 mins.

I just love the taste of these rices.
