Is it safe to reuse oil used for frying pholkis/samosas, etc?
Re: Reusing Oil
Yeh i suppose it should be.. i Reuse oil.
Re: Reusing Oil
same question was being asked from a cooking expert in a show and she said that oil can be re-used upto 3-4 times and after that it should be discarded as the oil looses all it nutrients after so many uses.
Re: Reusing Oil
I agree with Diamond's comments... it also depends on what temperature you have used the oil before ... say for example , if you normally use very hot oil to fry pakoras, fries etc ... then dont extend it to more then 4-5 uses.
But if you usually do your stuff on medium low heat ( which is the right way of frying so that the ingredients within gets cooked properly) then please notice the color of the oil, if its gone much darker then its original color ... time to get rid of it ... other wise carry on using it ...
Mine lasts at least upti 7-8 uses. As i dont like wasting oil. Alhumdullillah its never given me any problems , but i have noticed when the oil is much darker , it gets absorbed more in the food. Just an observation.
Re: Reusing Oil
thanks, guys!
diamond, I'm not so worried about it losing nutrients (especially the kind used for pakoras and such!), but more about it becoming toxic.
Re: Reusing Oil
A few relevant links. It seems important to make sure to strain the oil before reuse.

Re: Reusing Oil
I was watching this show with Zubaida Tariq the other day and she gave a tip to clean the used oil and make it reusable;
Take a knob of garlic and clean it with a teacloth.
Place it in the heated oil and let it boil until its brown.
Once it's browned, it absorbs all the impurities and sits in the bottom of the pan.
Remove it, and the oil is good for use a couple more times.
I haven't tried it but she knows her stuff, so I guess its worth a try.
Re: Reusing Oil
same i have heard of chef ZAKIR he said to place an onion in the center of the pan and it will absorb the impurities if the chefs are recommanding it so i think i will do it.
