Reusing cooking Oil

How often can one reuse the oil for frying?

Ive noticed that after frying chicken drumsticks or fries/onion rings etc the oil gets darker, so i just reuse it for making salan…however, the oil used to fry fish is just lying around…what else can it be used for so it does not smell of fish?

I don’t use oil that I used for frying for salans. I don’t think it is healthy. I do use oil for frying to fry other things. I typically would reuse the oil for frying for 2 or 3 days in Ramadan when I make lots of fried items for Iftar.

Hopefully others could shed some more light on this issue.

Eeeeeek, please DO NOT reuse oil for salan,always make salan with new oil. As far as reuse for frying is concerned i use it about 2 times or 3 max.
I only reuse oil if it has slightly changed its colour when it gets really dark i simply throw it away clean the karhai and fry stuff with new oil.
It’s not healthy using it again & again.

Dont use oil for making salan. I also reuse it for frying but I use more times than girls mentioned here. I filter oil after using it 3 times and then again it can be used. I use it for like 6 or 7 times

Why cant the same oil be used for salan? Specially if you have only fried in it once or twice?

Yup I use it for salan after using it for frying once, and I ALWAYS strain it…it doesnt turn black, just a shade darker than the actual gold color…Dont do it everytime though, i use fresh oil everyday just sometimes if i fried something the night before etc…I’ve never used the same frying oil for re-frying…but whats the hazard?

I don’t know, but I just can’t reuse oil to make Salan.

I use to be like this, reuse oil till it was almost finished :bummer:
But Now I can’t use it more than 2,3 times as I mentioned.

I know many people who use same oil for frying for whole Ramazan :disgust:, I think that why deep frying is discouraged, the eatables suck oil also too much and then its costly if you change oil very frequently. Its only Ramazan when I need more frying otherwise it may be twice or thrice a month. If im using oil in frying pan or wok I also tryo to use for 3 or 4 times but in Deep fryer it takes 3 litre oil and I cant simply throw it away after 2 or 3 times

Exactly Ramadan is the time when oil is used frequently. Otherwise we don’t deep fry anything!
Unless lovely weather and we’r in a mood to have pakoras.

I do make broast and french fries also occasionally, sometime fish fry too

Haven’t you heard of the restaurant that’s used the same oil to cook their burgers for like 50 years?? I think that’s kinda gross. I think the same oil can be used for frying 3 or 4 times. If you’re frying after that, then replace the oil. I think the food tastes better when you use ‘fresh’ oil

I fried Pakoras for Karhi on Friday and today some potato crisps in same oil and the oil is still looking fine
