Restaurant level karahi!!

Please share recipe & any special totkas for a restaurant style chicken karahi. They have a different taste to it, its not typical. What is it they add that makes it so yummy yet different?

a real karahi, very strong flame, and some violent khichaa taani (khichh t’ooo in punjabi) of the karahi…and not to forget…some paseena of a 40 something man…:k:

Some makhian , dirt from the road which flies and ends up in that karahi, every time a car , motorcycle , bus , rickhshaw and taxi passes by.
You will find out that the karahi of a dhaba which off the beaten path is not as tasty.
