Goodness me … chukinder is beetroot ? I was about to give the recipe of sweetpotato with meat :smack:

Really sorry Muslimah, dont know the recipe but I like what TLK said , why dont you try cooking it the turnip way … is the beetroot usually cooked until really mushy in that dish?

My sister married into a Delhi-wala family, and they make chukandar gosht ALOT!! The beets do not get mushy, they retain their shape quite well...I personally have never made it, I'm not fond of chukandar, but lemme ask her and I'll report back....

^THANK YOU!... eagerly awaiting... My dad loves this dish, but my mom doesn't know how to make it, so I want to make it for him since he's coming to visit me for the first time after getting married.

You just bhuno the gosht with onions, garlic ginger, tomatoes and spices. When the meat is almost tender, add the beets and cook on low until tender. Usually it's not a salan type consistency but more the bhuno-masala type.

Oh, this is one of my favourite meals! I love adding chukandar ghosht to rice - the rice ends up all pinky-red :phati:

Mama always grates the chukandar before adding it to the salan. And like Niks said, it’s a bhunna-huwa/dry meat dish and not a soup-y salan.

I’ll see if I can get Mama’s recipe. Oh and one more suggestion - if you handle beets, to avoid staining your hands red, rub oil on your hands to create a barrier between your skin and the beets or wear gloves when chopping the beets.

I only like chukandar in salads. I'm not curious to try it as a salan...considering shaljam gosht makes me ulti.

Take 1 lb ghosth and add 1 tsp mirchi (more or less according to ur taste), haldi (1/4 tsp), salt, hara dhanya (1/2 bunch chopped), hari mirchi (4-5) chopped, 2 tbsp yogurt, 1 tbsp of sifted achar ghosth shan masala and marinate this for 30 mins. Add oil to a pan and fry a medium onion until light brown, add the marinated ghosth and lower the heat. The meat should cook in its own water. DO NOT ADD WATER. If your flame is low, the meat will take time to cook but won't burn. once the meat is 3/4 way cooked and its time to bhoonify. Sprinkle a med pinch of garam masala as you bhoonify the meat and then once the oil sepeates, turn it off. I should have told you to grate 3 to 4 medium chukander. Now add the chukander and 1 tbsp lemon juice (i like khaatas in food so u can omit it if u want), and 2 to 3 hari mirch. The meat will cook with the chukander until it is done. Once both are cooked u can garnish it with hara dhanya and hari irch and a sprinkle of garam masala.

I use about 1/3 cup oil and when you add the chukander, you have to kinda have to estimate that the ratio of chukander n ghosth is equal. Chukander will shrivel down so keep it almost double of meat. This is the basic recipe that ive used and it turned out good. Usually I make chukkander keema
