It should work may be Canada’s weather is cold enough and not letting it settle. Try putting it in oven by heating oven for few minutes on like 100 degrees and then putting yogurt in it after 15 mins of switching off heat. And do use natural yogurt not the greek style one

it has nothing to do with the temperature in canada. The regular yogurt sold in stores doesnt have enough live bacteria(it is practically dead) to make the curds out of the milk. What I have heard is that if you want to use the store bought yogurt as starter then you should leave it out for atleast overnight and use it to make yogurt the next day to make/have some of the bacteria.

I use a starter to make dahi, and then keep using the same dahi as a starter until it is not as fresh anymore and then I make a batch from scratch again. I use a starter for kefir too. I dont use any special equipment or incubator, I only use a thermometer to get the temp right, and then put the container in slightly warm oven(which is turned off before putting in the container with milk and starter, the oven should never be hot or it kills the becertia needed to make dahi)

Boneless Beef Karahi

Beef: 1/2 kg
Salt: to taste 1tsp usually
Coriander powder: 4tsp
Gingler Garlic paste 1/2 tsp
Whole red chillies: 4-5
Green chillies 1-2
Tomatoes: 4 medium or 3 big
Yogurt: 3-4tbsp
Cream 2tbsp
Corainder leaves: as required for garnishing
Ginger sliced for garnishing
Grama masla 1/2 tsp

Add salt, ginger garlic paste, coriander and tomatoes (sliced) to the beef in pressure cooker. Put enough water (dont put oil). Give it 15-20 minutes in pressure cooker depending how your beef tenderizes usually. WHen tender now bhoonify it by adding yogurt and red chilies and garam masla first. After 2-3- minutes add sliced green chillies and also put oil now and keep on bhooning for other 2-3 mins. Add cream when u feel there is no smell and gravy is in good form. After adding cream just simmer on low heat for a minute and add coriander and ginger sliced (Julian long) and cover for 3-5 minutes. Keep on low flame for a minute only and then close flame. By this the smell of ginger would penetrate. Enjoy with naan or home made rotis

CHICKEN BREAD

Ingredients

For Dough

Maida: 3.5 cups
Yeast 2tsp
Milk Powder: 2Tbsp
Egg: 1
Salt: 1.5 tsp
Sugar: 2tsp
Butter: 3-4Tbsp
Baking powder: 1.5 tsp
Warm water to dissolve yeast: 1/2 cup
Seasame seeds

Method:

Melt the butter and add to the maida and mix it.
Add all other ingredients except seasame seedss and form a dough of medium softness (not very hard but not a very soft either)
Save little egg from here for brushing over the chicken bread
Leave the dough in warm area to rise for 40 mins
(seasame seeds are for sprinkling)

Chicken filling

Chicken boiled and shredded: 3/4 cup
salt: to taste
Black pepper: 1.5 tsp
White pepper: 1.5 tsp
Corrainder powder: 3/4 tsp
Ajwain: a little
Zeera Masala: 1/2 tsp
Crushed red chillies: 1/2 to 1 tsp
tomato Paste: 1.5 Tbsp
Soy Sauce: 1Tbsp
White sauce 5 tbsp

To make white sauce put 1Tbsp butter in pan and melt it, Add 2-3 tbsp of maida and mix it. Then Add 1/4 cup of milk to heat after getting it off from flame and mix untill it turns into thick paste.

Boil chicken and shred it. Put Soy sauce and tomato paste in chicken and leave for 15-20 mins. In a sauce pan put 2-3 tbsp oil and put chicken in it. fry for 2 mins then put all maslas and cook until u feel a good smell, then add white sauce to it.

After that when dough is done Roll it in a square shape, keep using maida and melted butter to aid you in this process. It should not be very thin spread as usually we have in pizza rather a bit thick. After doing the spread put the filling in the middle and from the sides of dough have a cut at regular intervals and then fold it over filling. (I have attached picture link the way you should cut and then fold.

Once done brush the final shape with egg and sprinkle seasame seeds and bake in oven for 20-30 mins on 170-180 degrees, depending on time of ur oven.
