I use Qeema without any fat and Alhumdulillah kabab have never turned bad. Fat is used in Afghani kabab and Afghani kind of dishes, I dont put any fat in these kababs.
Good to know that Potato cutlets turned well for you. I would look forward to pics :):flowers:

here you go makd

Boiled potatoes: 6 medium sized
Salt: to taste
Cumin powder: 1.5 tsp
white pepper: 1.5 tsp
black pepper: 1tsp
Soy Sauce: 1tbsp
grinded coriander: 1/2 bunch
green chillies chopped: 2
spring onion: a handful (just cut them in thin size)
(i dont put onions)
Chedder Cheese (grated): 1/2 cup
boiled chicken nicely shredded: 1/4 cup
These 2 are optional but they add great taste to it.

For coating:
egg
bread crumbs
corn flakes crumbs (not much coat them like bread crumbs)

Mash potatoes and add all masalas. Then coat them in egg bread crumbs n corn flake crumbs and shallow fry them.

Easy Marble cake

Butter: 225 grams
Plain Flour: 16Tbsp
Sugar: 12Tbsp
Eggs: 4
Baking Powder: 2 tsp
Coco Powder: 3Tbsp or chocolate: 100 grams
Vanilla essence: 1tsp
Milk: 3-4 Tbsp

Method:

Pre heat oven to 180 degrees.

Melt butter in microwave and then mix it for 2 mins.
Add sugar and mix till pale yellow
Then add eggs one by one.
Sift flour and add baking powder to it and fold it into the mixture you made
(Folding means that you add flour little little and mix it manually by stirring softly clockwise and anti clockwise). You can even mix flour using the beater but try then beating at slower speed.
Add milk to the mixture to give it a better consistency (you can even avoid this step)
Now put the 2/3rd of mixture in the greased cake pan.
Now add coco powder to remaining mixture and then add it to the mixture in pan already. And just irregularly mix it over and around. so that you get feeling that coco and the plain mixture is mixed randomly.

Put the cake in oven and bake it for 35-40 mins.

Check with skewer or tooth pick. if it turns out plain after inserting in cake then cake is done.

Note: If you are using chocolate melt it in the microwave to form a kind of paste. Dont over heat. Other way is to use the double boiler in which you heat the water in a pot and keep a heat resistant bowl (pyrex) over it in a way that water dont touch it but steam should come to it. Pour chocolate in it with 1 tsp of oil. And add to the mixture instead of coco powder.

VARIATIONS

You can alter it with coffee cake in which you will add 2.5 tbsp of coffee in warm water and mix to cake mixture.
Other alteration can be that add 50 grams of chocolate and 2tbsp of coffee powder in warm water and add to cake.
Plain cake can also be made in same way just omit coco powder

Naan

Maida: 2 cups
Yeast: 2tbsp
Warm Milk: 1/2 cup
Sugar: 2tsp
Salt: 1tsp
Oil: 3tbsp
Baking Powder: 2tsp
Powder milk: 1.5 Tsp
Egg: 1
Kalwanjee: 1/2 tsp
Red chillies (crushed not grinded): 1/4 tsp (optional)
Seasame seed: 1/2 tsp

Method:
Dissolve yeast in luke warm milk and leave for 10 mins.
Then add sugar, salt, baking powder, oil and just mix randomly
Add egg at one side and then give it a form of dough by adding yeast wala milk. You can use more water to knead if its less.
Then add kalwanjee, seasame seeds and crushed red chillies before you do final kneading.
Leave the dough atleast for half an hour in warm place.
Then make naan out of it as the way we make roti but naan would be smaller in size and also thick.
Preheat oven to 160 degrees.
Put the prepared naans into oven and bake untill done it usually takes 7-10 mins, just keep checking as otherwise they may turn hard.
You can even cook them on normal stove in a frying pan just by adding an oil enough that it just wet the base.

Chicken Wings

Chicken wings 12 pieces
Lemon juice: 2.5 Tbsp
Ginger Garlic paste: 1tsp
Egg: 1
Plain Flour: 3-4 Tbsp
White Pepper: 3/4 tsp
Black Pepper: 1tsp
Mustard Powder (rayee): 1/2 tsp
Soy Sauce: 1 tbsp
Baking powder 1/4 tsp

Marinate Chicken Wings with all the ingredients, except eggs, plain four and baking powder. Leave for 20-30 mins
In another bowl prepare a kind of paste with egg, plain flour and baking powder. Coat the wings with this mixture ( To make more crisp you can also have mixture of potato chips and corn flakes grinded and coat over the coating that u prepare.) I usually fry it but you can just put in oven for 25-30 mins. Even you can use rice flour for coating over the past coating. Sometimes even bread crumbs. This can give variety of flavours

Does this recipe seem correct for Bhagaray Baigan? i got this from someone but every time i make it, it doesn't taste the way there's tasted.

Sesame Seeds (2 cups)
Dhaniya Seeds (1.5 cups)
coconut (1 cup)
poppy seeds (a little less then 1/4 cup)
peanuts - 1/2 cup
6 onions

I bhoond all the above dry ingredients separately. and bake 6 onions in the microwave.
in a pot - i add 1 cup oil, sabood laal mirchay, 1 teaspoon zeera, 6-7 curry pata.. and fry this for a few minutes.

i then take the bhoonda mixture and add adrak -lehson, imli paani, 6 onions and grind to paste. then i add this paste mixture to the oil pot.
add 1 teaspoon haldi, 1 1/2 tablespoon laal mirch, 1 1/2 tablespoon salt, add a little more imli paani, cook for a few minutes. at the end add the baigan with some anaheim peppers.

please let me know if im missing something or should add something? thanks

I have a different recipe and thats from my Hyederabadi friend. It also includes Rayee powder, Methi dana and kalwanji. Moreover I am amazed on the quantity of the Sesame seeds, coconut and coriander seeds etc. Who put it in cups measurement. In my recipe they are only 5-6 tbsp. I guess that is basically making it wrong. Im a bit busy at the moment but will publish the recipe soon

anyone have tip how to make yogurt from milk taken from carton ? Can do it using the milk i get from here in canada or the yogurt from here either (Jaag) ? I heard some people use yeast ??? confused.

boil the milk (regular or 2% milk works best) and cool so it is lukewarm. add a few spoons of store bought plain yogurt for jaag. stir/mix and cover in airtight container. let sit in warm place for a few hours.

my mom makes it in the store yogurt container, mixes it and closes it, wraps it up with a kitchen towel and puts it in the microwave oven (not running…just to keep it warm) for a few hours to make homemade yogurt.
