? regarding meethay chawal (zarda)

this is a question in urdu from my mam, and i’ll prase it in the best possible way you if u understand wat i’m trying to say then answer justly.

rite here goes… jab chawal rang dal ke ubal tee hain us ke baad butter aur cheeney ko garam kartey hain, takeey chashney teyaar houn.

mujeey ye battaein ke chashney kesee dekhneey chahiyee when ready.

my mam makes sweet rice quite a lot but according to herself she struggles to findout whether or not the chashney is actually ready or not.

2condly, matanjan keese banta hain.

plz don’t ask me of wat these 2 tounge-twisters of words mean cos i haven’t got a clue my mam knows best.

if you guyz can help plz reply asap.

I don't know what chushney is so can't help you there.

For your second question, I think mutanjan refers to when you mix zarda and biryani together.

chasheny is - the sugary syrup which consists of water and sugar. a good tip here is when ,making zarda instead of putiing water in sugar try a glass of freshly squeezed orange juice or milk!

anyway bk to ur question its hard to explain in writing better if u see it visually but here goes:to test whether chasney is done put like a rice spoon in the syrup and drizzle it off, whilst it is drizzling check to see if u can still see the sugar crystals there if u can still see them that means that the sugar has not yet combined properly so boil it further.

Aray yaar ,
its very easy to make zarda,
boil rice with color
when they r ALMOST done( try pinching a couple of rice , there should be a little medium hard little center left in them, thats when they r done)
throw away the acces water ,
then put them back in the degchi , level it out and spread sugar( according to taste) and cut almonds and pista and khoya and on very very low heat keep it covered for at least 25 minutes.
lazaaz zarda is done!
ps: the ratio of rice and sugar is up to you , i use 1 cup rice and 1 and a qurter cup sugar, it may be too sweet or less, you choose.after a couple of times you'll get the ratio right.

jab butter aur cheeney ko aap garam karte hain us waqt aap use chamchay se hilaate rahen…jab cheeni poori tarah liquid ke form mai ajayegi tab samajh len ke sheera tayyar hai…

Mutanjan is a kind of sweet rice. Zarda is yellow whereas in mutanjan different colors are used. Most of the rice are white and some of them are red/green/blue/yellow. How to get the colours... I guess it's th same as in biryani...u prepare the sweet rice without adding any colour to the boiling water. Once it is ready you put a few drops of different food colors in different spots. After a few minutes just mix them all up and you have your mutanjan.

Too bad Inso doesn't talk to me or I would have surely let him now what mutanjan is.

thank you guppies for understanding the ? and answering coherently, i didn’t say that my mam doesn’t know how to make meethay chawal, its just that a certain process whilst making meethay chawal doesn’t seem to go rite.

  • i know wat matanjan is i never asked what it was??? i asked how does one go about making it. i now wat matanjan is but i don’t call them that i have invented my own name for them which i have been using since a kid, i call them rang-barangee chawal (multi-coloured rice)
