Are we able to refreeze meat that has been defrosted? I took out some chicken tonight only to end up making a quick pizza and don’t think I’ll have a chance to cook tmrw either. Can I refreeze that Chicken even though it’ll be a whole evening and night it was left to defrost ?

a big NO...refreezing thawed food is dangerous to your health. it can be even fatal. so, please refrain from doing so.

The U. S. Dept. of Agriculture (USDA) advises: Once food is thawed in the refrigerator, it is safe to refreeze it without cooking, although there may be a loss of quality due to the moisture lost through thawing. After cooking raw foods which were previously frozen, it is safe to freeze the cooked foods.

Safety will depend on whether the raw product was handled properly before it was frozen, refrozen shortly after it was thawed, cooked to a safe temperature when it is eaten and handled safely if there are any leftovers.

OK, I guess I did not read that. I want to be honest that I have refroze thawed meat few times. Not that I recommend it.
I guess the best OP could do is to marinate the chicken and put in the fridge. It can stay their for 2-3 days.

i said that because after the big power outage a few years ago, all the meats in the stores that got thawed were thrown out and Health Canada advised Canadians to throw away their thawed out meats, citing health hazards.
