Ok Guys , as per your request.. Here goes ..:
**Aloo Kebab Recipe: **
- Boil Four potatoes, then peel and cube them and leave them to cool a bit.
- using a masher , mash the potatoes to a fine paste.
- finely chop half an onion, 5 green chillies, one cup fresh corriander, half a cup of fresh methi or one cube of frozen methi , quarter spoon of garlic. Mix into the potato paste
- Add spices: one tsp red chilli powder, one and a half tsp salt, one tsp crushed zeera, one tsp crushed corriander seeds, one tsp anardana seeds , one tsp imli sauce
Mix and keep aside for half hour. Then make round patties and dip them in egg and into the frying pan .. dont use more then one tbs of oil while frying them.
Tips:
- While boiling potatoes , make sure they dont becme overly soft in the middle , otherwise your mixture will be too loose and you will find it dificult to make stiff kababs .
- While mixing imli, make sure you add more of the roughage then the water. If you add water , your mixture will become too runny.
- while frying kebabs make sure your first side of the kabab is done fully before turning it … or else they will start breaking.
**Seekh Kababs: **
Half KG Mince meat, I mix two to three tbspoons of Vinegar into it and leave it aside in a strainer for 15 minutes. Then wash it loosely with water and leave it to drain for half hour . you can leave it in the strainer and put the strainer in the fridge .
Then in a blender, add one medium sized onion, four green chillies, half cup fresh coriander, one tsp ginger paste, one and a half tsp salt, one tsp red chilli powder, half tsp crushed red chillies, one tsp crushed zeera seeds, one tsp crushed corriander seeds … give the blender a good run until everything gets blended . Dont turn it into a paste please.
finally add well drained keema into the mixture and half a egg. Give it a few good runs until the keema gets mixed with the spices. Take out and leave in the fridge for an hour . you can make kebabs immediately too , incase you are short on time.
using a wooden skewer, shape up the kebab on the skewer with your hands and then pull it off the skewer and into the frying pan. Fry each kebab on low medium heat for 5-8 minutes .. When done with kebabs , heat a coal piece , place the kebabs in a pot, place the hot coal piece on a piece of foil paper and place that into the pot on top of the kebabs, then pour one tsp oil on the coal and quickly cover the pot. Let it be on dum for a good 20 minutes. Dont light the flame under the pot. Remember the kebabs are already cooked ![]()
This platter has four things m chicken nuggets, potato balls, potato rose, baby tikkas. Recipes are as follows:
**Chicken Nuggets: **
**- **cut boneless chicken into bite size pieces. add one tsp yoghurt , quarter tsp salt, some black pepper,quarter tsp garlic, quarter tsp garam masala. Mix it and place this on a baking sheet and into your oven on 180 degrees for 20 minutes.
- Then take them out and leave them to cool.
- Take three separate plates, crack an egg in one plate. Bread crumbs in the second plate. Plain maida in the third plate. Mix dried herbs in the maida if you have some.
- Roll a nugget in the egg, then the flour, then the egg again, flour again and finally the bread crumbs and deep fry them.
Potato Balls
Boil one potato, mash it. Mix some fresh corriander finely chopped , into the potato mixture, half tsp salt, half tsp black pepper, three tblspoons chedder cheese ( shredded) . Make balls , roll in egg and shallow fry them. let them cool. when cooled down, adjust their shape , lightly roll them in your hand to give it a round shape. Then roll them into bread crumbs and give it a quick run in the deep fryer.
Baby Tikkas
One cup mince , wash and drain well.
Slice half a onion and fry it. Let it cool. Then add in the mince mixture. Add one tsp boiled potato mixture, half tsp salt, black pepper, quarter spoon ginger
Blend it , add one tablespoon raw egg into it for binding. Mix again.
Make small balls and shallow fry them. Then cool them. Put two of them on a toothpick, add a tiny piece of red bell pepper to make it attractive for kids.
