step by step recipe of Afghani pulaw.

Ingredients
• 3 tablespoons vegetable oil
• 3/4 carrot, julienned
• 1 teaspoon white sugar
• 1/2 cup black raisins
• 3 cups saila rice
• 1/2 cup vegetable oil
• 1 stick cinnamon
• 1 teaspoon black pepper for yakhni
• 1 teaspoon for chicken
• Salt to your taste
• 1 onion

In a frying pan, heat 3 tablespoons oil over medium heat. Add carrots and 1 teaspoon sugar; cook, stirring frequently, until tender. Stir in raisins, and continue cooking until the raisins are soft and plump. Remove from heat, and set aside to cool.


One cup onion broth
Brown 1 medium diced onion in oil. Fry until the onion is fairly dark add a cup of water cook for 2/3 min and stain with strainer.

One cup chicken broth
In a pan add chicken with few garlic cloves, black pepper, cinnamon and salt, and cook it on a low heat for 20/25 min. separate chicken from the yakhni.


Bring a large pot of water to a boil. Strain rice, and then add to boiling water. Cook for about 5 minutes, and then strain with a strainer.

Fry chicken along with black pepper and salt for 2/3 minutes.

Add rice on the top of the chicken. Poke some holes with a spoon all over the rice and fill them with onion and chicken yakhni . but it on dum form 20 minutes.

This is how it looks like after dum. Garnish with carrots and rasins.

This looks very nice Shabe Hijr.

The authentic afghani version asks for channelization of sugar to give brown color to rice. I for one, prefer frying onions.

thanx for this recipe I made this yesterday and apart from a lil less salt I didnt do to bad for my first attemp on Biryani

I would just add tho, dont forget to only half boil the rice other wise they will come out quite mashy. I gave dum to my rice in the oven by putting foil on the top with a lil water in the centre of it and putting small cuts in the outer edge of the foil and then covered with the lid.

- Bhindi Pyaz -

Ingredients:

1/2 kg okra/bhindi (slice into 1/2" pieces. Discard top and end)
2 med onions
2 med tomatoes
1 med lemon

1/2 cup cooking oil
1/2 teaspoon red chilli powder
1/2 teaspoon coriander powder
1/2 teaspoon garam masala
salt to taste

**Step 1:
**
Fry bhindi in a pan and sprinkle the drops of lemon juice. put them aside

Step 2:

heat the oil over high heat. Fry onion in the same oil for about 5 minutes.

Step 3:

Add the spices (red chilli powder, coriander powder, salt).

Step 4:

fry for about 5 minutes (Mix well)

Step 5:

Add tomatoes. mix well again.

**Step 6: **

Add fried bhindi. mix well

Step 7:

Cover the pot for 5 minutes on low heat.

Bhindi pyaz is ready to serve sprinkle some garam masala

Melt chocolate on double broiler

Add Almonds to chocolate

Almonds candy that will go inside the Raffaello

Make crumbs of wafers

add mascarpone into crumbs and mix them well

Make balls

cover them with Coconut

final result

devillish i try yr biryani but actually from begning my marination was wrong.bymistake i replace giger garlic paste withsalt and chili. so i add these after onion frying.
tastwise ok but burning on stomach i put masalas 1 teaspoon each eventhen it was not light.
i will give 4/10.i will try again can u suggest masala measurement.
honestly for guests i use lazizas bombay mix(for biryani i dont like shan)its excelent20/10

jiia in 1 kg chicken i also add 1 teaspoon of every spice but its not full till top dont know y it became so spicy
