recipes/menu ideas for south beach diet

Guys, i am trying to cut back on processed foods and eat healthier. To help me, i am following the south beach way of eating and seeing great results. The only problem is that the plan instructs you to eat alot of veggies and some meat each day and i am having a hard time trying to conform it to our desi way of eating. I need to get in a total of 4.5 cups of veggies in each day. I tried eating gora way for a while (grilled meats and sides of veggies) but i know i cant do it forever. I was this to be a lifestyle change, not a quick fix. Please share ideas on making beans ( i either make bean salad with chanay or soups) and veggies (i was thinking of sticking with veggie curries which i like). If you have any other ideas, please please please share. I dont want to get bored quickly either.

butter chicken (minus teh butter and with lower fat cream/milk/sour cream) is good oto.

many times I have had dry chicken karahi/curry with just yogurt and salad when I finished my roti (like half a piece of roti) but i had lots of salan left over. It can be pretty good i think.
I imagine a veggie "tarka" could work wiht daal as well.

I would make chilli (i think their is a level in which you can have chilli for south beach diet) other salans can be vegetable salan minus lots of ghee and stuff. You can also do baked fish or saute it.

How does the south beach diet work? Is it just cutting out carbs?

I'm cutting back on carbs and find dry chicken curries with salads are great. Eg. Karhai chicken.
Also, for a rice alternative, I'll sometimes grate some cauliflower and zap it in the microwave. Not rice I know but you can eat runnier curries with it. Alternatively do a cauliflower or celeriac mash to have your curry with.

I found that this is where thai/chinese/japanese style foods are great. You can make a lot of those sauces yourself, avoiding adding sugar, and you can stir fly all kinds of combinations of veggies.
