** Ingredients **
400g/14oz fresh blackberries
100ml/3½ fl oz cold water
200g/7oz caster sugar
2 lemons, juice only
300ml/10fl oz thick, natural yoghurt
**Method **

Purée blackberries with water to make a juice. Sieve juice to remove seeds. Add caster sugar and lemon juice and mix well.

Fold the yoghurt into the blackberry syrup. Place the mixture in an ice cream maker and mix for 15 to 20 minutes, until starting to freeze.

Transfer to a plastic container and freeze. (If you do not have an ice cream maker, pour the mixture into a shallow metal or plastic container and put it in the freezer for 2 hours.

Remove it from the freezer, beat the frozen edges into the softer centre, then return it to the freezer and leave until it has frozen.)

Take the frozen yoghurt out of the freezer 5 minutes before you want to serve it to allow it to soften slightly.
