muniya... you can make it using achar gosht maasala from Shaan...
heat oil... add mustard... add aloo... then ginger garlic paste... then add achar gosht masala and some water... cook it till aloo is tender... garnish with green corriander... you can even add paste of fresh coconut to make it thick gravy types...

i will try and find out achar masalas soon...
SAJAL, yeah grinding a gresh coconut ... or may be use desicated coconut, dry roast them and then grind them with some water

I dun eat out...so i dun really know the restayrant version of this dish. I'd make it the way Daagh suggested except i use my own achari masala that is...saunf, kalonji, zeera n methi dana. (fennel seeds, black onion seeds, cumin n fenugreek seeds)
Basically these ingredients are added to any veggies or fruits of choice like carrots mangoes, chillies etc. with oil n seasoning n are kept in sun/warm place to turn it into achaar. so heating this on flame would result in the same flavour.

the above combinatrion of spices also come in packets...they're called 'Panchpuran'(five spices) or achaar masala....you can add crushed red chillies, salt and a pinch of amchoor powder or crushed green mango for the perfect achaar flavor in the achari aloo dish.

that's how i cook my aaloo achari ( my aunt's recipe) , panchpuran masala a bit + little chopped onion + very little tomato + little oil + potatoes + little water + salt + crushed read pepper + curry leaves , put all in pressure cooker , let the whistle run for 1-2 min and it's ready ..........taste great ( i don't like achar itself in aalloo)

i think i posted recipefor achari allo here ,but not sure about that,anyway here is the way i makes it.boiled poatoes with little salt.and then cut it in cubes.fry zeera in oil then add potatoes,fry for few min,then add acchar masala,that is Grind soonf,zeera,sabut dhania,mathi dana and red whole mirch..I tsp of each for 1/2 kg potatoes.add this masala with kaloonji,dont grind kalonji.add pinch of heldi,the fry for a min,add few spoons of youghert and fry,then add little water to that,garnish with green chillies and corriander leaves.if u like more acchari taste add any achar to that or any type of khatayi.
