Hi Guys, im posting a recipe of this moong dal thing i just tried. My co-worker is South Indian and brought it in for me…I had mentioned that some people from karachi make this thing out of raw chanay ki daal and just soak it in water few hours…but i dont like that one. This one was yummy and crispy.
Basically she said take about 1/2 - 1 cup of whole moong ki daal and submerge in water. just enough water to cover it and soak it…no more. Let it sit for two days until it grows sprouts…and key to that is to keep it at room temperature. Once the moong dal has grown little sprouts your ready. Just cut up cucumber into really fine chop, only the firm part, take out the seeds. Also cut up onion fine, and also some coriander. Squeeze about juice of one lemon, salt, pepper, chat masala and any other masala you want. It was light n refreshing
actually with moong ki daal, key is to put just enough water to cover the daal, room temperature..no salt. Onc eit starts to dry out, place something wet on top of it to retain moisture..like a soaked wet towel or few soaked wet napkins....with this daal you want it to grow sprouts. Its no longer hard, rather slightly soft n crispy...similar to the white bean sprouts u see with chinese. It is also very healthy.
oh it’s this stuff - yeah it’s all crunchy and nice with a little salt.. i’ve never made a salad like you described, but i make a salan out of it. fry zeera, finely chopped onions, green mirch, garlic, garam masala, dhaniya powder, lots of tomatoes, lots of green dhaniya, a little bit of coconut milk and these bean sprouts, then add a little bit of water and pressure cook it. garnish with lemon juice. it’s delicious!
some people make a chaat out of it too. i havent’ had this in ages
