recipe for marinades

hi guys and girls

i would like recipe please for chat-pata marinades for all be it meat fish or chicken thanks, gna make roast chicken tomorrow and want a different marinade instead of the usual boring masalas.

I've been using store bought mint chutney + garlic paste + spices to marinate chicken and fish, turns out a little different than usual and very yummy.

Well I will share my desi recipe and some others too.
I do this for my signature lamb roastcwhich is always a super duper hit

Salt, pepper, red chilli, green chilli, ginger garlic paste, lemon juice, olive oil, pataks curry paste, yoghurt, cumin, dhaniya powder. Mix all of ingredients and marinade meat, place in baking tray cover meat with thick tomato slices, lemon slices cover with foil and roast for about 3 hours till meat comes of bone easily. So deelish you msat try this!!

One for chicken. Sticky chicken wings/ drumsticks
4 tbsn runny honey, glass orange juice, white wine vinegar, balsamic vinegar 1 tbsn, salt and pepper, tabasco sauce just a dash, worcestershire sauce 1 tbsn, crushed garlic cloves,
Mix all of above marinade chicken pieces well, transfer to baking tray place in oven UNCOVERED. Periodically toss the chicken about, do not worry if liquid seems to much, it will become sticky and thicken as it cooks. Keep tossing around till chicken is evenly cooked and sticky.

Now to do chicken english stlye, i do this when making roast dinner with yorkshire puds and roast veg so yum and never had any unhappy customers lol

Generous amount of butter room temperature so it is soft, 2 sprigs of fresh rosemary finely chopped,( remove the leaves from stalks and chop), 3-4 cloves garlic finely chopped, salt and pepper. The chicken for this recipe needs to be skin on, thighs work best and the meat cooks so tenderly. Using your fingers gently push some of the butter mix under the skin, press and push it under till covers the whole ofthe thigh, alternatively you can just coat the outer skin with the butter and place in baking tray. If you like you can also scatter unpeeled garlIc cloves around the chicken along with cherry tomtoes, roast in oven with foil on for first hour then uncover and roast till chicken is nicely browned. This is not a spicey recipe, and it is not supposed to be but it is really tasty. I hope this has helped. :)

That's how I make

1 beaten egg
2 tbsp all-purpose flour
2 tbsp corn flour
1 tsp ginger paste
1 tbsp garlic paste
1 tbsp soya sauce
1 tsp vinegar
1 tbsp lemon juice
1 tsp red chili powder
1 tsp cinnamon powder
1 tbsp paprika
salt to taste
half tsp chinese salt
half tsp black pepper powder

Cover with cling film and put the bowl in the refrigerator for at least 4 hours, preferably overnight.

Coating: All-Purpose Flour, red chilli powder and salt

with your recipe damsel do you bake or fry your meat after it has been cooked?

I fry them, never tried baking with this marination :)
