Pakoray is what i am looking forward too.
Healthy snacks.... hmmmm.... i guess fruit chat is one healthy item. I make it thru out Ramadan :D

I kind of want to avoid the fried foods route...or at least just make it once a week...hubbys okay with it.

we do it too. We make the traditional aftari once or twice a week and for the rest of the days we have normal dinner .

I cannot eat much at Iftar. So its very very few items on the table. but pakoray are must. Mostly i dont eat dinner coz i dont feel like eating. Pakoray itnay khaa liye hotay hein ke pait mein jagah hi nahin bachthi :(
PS: i live alone so there is no fun in iftar anyway.

^ what I was trying to say was the day we have dinner we don't have iftaar we just directly have dinner instead of having iftaar first :(
pakoras are made of basin & are very heavy ....after having them you don't have much space in your tummy to accommodate dinner :)

Don't do anything special.. break your fast with dates/water, pray maghrib, and then regular dinner after that.. howz that?

I do agree with Gemini ... breaking the fast with dates and water ... and then having the usual dinner is the healthiest way to eat during ramadan ...
Or why not simply grill some vegetables and enjoy them with a simple drink.
for example , last year I had some elderly guests over during ramadan .. due to health issues fried food was not an option. So I mixed some herbs and desi spices on sliced brinjal , cauliflower florets, sliced potatoes, capsicum , large chilli pods and grilled them in the oven. That was healthy and nice ...
Fruits can be another great option. Fruit salad, fruit chat, decorated fruit platter , smoothies etc are another healthier option.

I haven’t started any preperations yet. I usually make 2-3 Iftaar items but if not then dates and milk and then just dinner.

Healthy food is avoid deep frying replaced by shallow frying...less sugar & salt...add more raw greens & (dry)fruit dishes + dates of course...bleach, steam or microwave your vegetables...use more whole grains in place of meats... :)

hubby wants lots of deep fried items for iftar no dinner but he goes to gym and cover it alll but i just see his face eating :(
