OK so let's start with boondi ka raita. People please share some good recipes of this!
Into the boodi ka raita, we also add chick peas, boiled/diced potatoes, diced tomatoes, salt/chili powder/garam masala. The texture is more like a chaat...which sometimes people will serve with meals.
But my mom will also just keep it simple......by just adding boondi, hara dhania, a few finely chopped green chilies, and salt to the yogurt.

kept pretty simple ...
whipped yogurt
fresh mint julienned
fresh green chili fine chopped
1/4 onion fine chopped
1/4 tspn red chili powder
1 tbspn zeera (massla hoa)
boondi
mix and store for 1-2 hours. adjust salt to taste.
too thick yogurt is thinned out with milk as needed.

Add salt, chaat maslaa, chili powder, garam masala, cumin seeds and salt in yogurt. Then mix coriander leaves, mint leaves, onions, tomatoes without seeds, chick peas and potatoes (both are optional) and boondi in it...you just add little of imli chatni in it n its so yummy.
Another version is adding boondi onions, potatoes and/or chick peas in green chutney made up of green chilies, mint leaves, coriander leaves.

boondi raita
Ingredients:
Salted boondi - 1/2 cup
Curd - 2 cups
salt and red chilly powder
chaat masala (optional)
Method:
Soak boondi in warm water till it becomes soft (5 mins). Beat up the card. Add little water if you wish. Squeeze the water out of boondi. Add this boondi to curd. Add salt and red chilly powder as per taste. sprinkle chaat masala on top.

WASH CHOLAI LEAVES WITH GOOD NORMAL RUNNING WATER UNDER TAPTWO THREE TIMES THEN IN POT TAKE WATER BOIL IT THEN BUT CHOLAI LEAVES FOR 1.1/2 MIN DRAIN IT OUT AND DISCART WATER.
ONION 1 MEDIUM
GINGER 1 TSP CHOPPED

INGREDIENTS:
Mint leaves [Pudina] - ½ bunch
Fresh coriander leaves [Hara dhania] - ½ bunch
Yogurt [Dahi] - 1 cup (250 gms)
Water - less than ¼ cup
Cumin seeds [Zeera] - ¾ tsp
Salt - to taste
Raw green chilies - 3 to 4 big size
METHOD:
1. In a blender jar put chopped pudina leaves, chopped hara dhania leaves, mix 1 cup dahi in less than ¼ cup water mix it and put in the blender jar, then add ¾ tsp zeera, salt, and 3 big size raw green chilies and then blend it to a fine smooth paste.
2. Green Raita is ready to be served.

Baingan / 3 cut in round slices.

Bhunee chutnee / 3-4 tbsp.

-Pan main oil dal ker zeera dalein aur thori deir baad palak add ker ke saute
karein.
-Hari mirch dalein,2-3 min tak mazeed saute karein aur plate me nikaal ker

-Palak main kishmish,onion,tomato dal ker mix karein aur dahi add ker dein.
-Aachi tarhan dahi mein mix ker ke serving dish main nikaal lein.

Loki / 1 med,grated.
Hara dhania / 2 tbsp.
Hari mirch / 1 small, chopped.

Kutti lal mirch / 1/2 tsp.
Sufaid zeera / 1/2 tsp.
FOR BAGHAR:
Oil / 2 tbsp.
Sabut lal mirch / 2-3 nos.
Karri pata / 6-7 nos.

-Loki ko steam ker lein 6-7 mins ke liye aur strainer main nikaal ker rakhein.

-Serving clay pot ko koyle se cover ker ke smoke de lein.

Kutti lal mirch / 1 tsp.
Haldi / 1/2 tsp.
METHOD:
-Dahi ko whisked karein,salt add ker ke,cucumber,tomato,onion,hara dhania,hari
mirch dal ker mix karein.
-Pan main oil dalein karri pata dalein aur zeera,kutti lal mirch,haldi add karein aur
thora fry ker ke dahi ke ooper dal dein,ready hai.

Cucumber and banana raita.
Chopped cucumber
chopped banana
minced green chillies
chopped coriander leaves
mix all above in yoghurt. add salt, sugar and mustard powder. It gives a lovely sweet tangy taste. Great with spicy dishes. Originally, a raita's most important ingredient is mustard (ie rai).
