Can someone share a tried recipe of qulfi that doesnt ask for condensed milk?

.. I am not the only one making kulfi’s these days ![]()
hubby requested that we make kulfi’s and that I find a good recipe for it … so I got on the job and called a lady in Pakistan who makes them at home and this is her recipe…
Take 1 litre full fat milk. Start boiling it in a pan on low heat. Stir it every few minutes so it doesnt stick to the bottom. keep boiling it until it gets reduced to three cups approximately. Then add a few cardamom pods and keep boiling on low heat , until milk is further reduced to two cups … finally add almonds /pistachio/nuts you like and sugar to taste , boil for about 5 minutes and take it off the flame.
Once its cooled down , put it in the kulfi moulds and freeze … and enjoyyyyyy ![]()

I use laziza kufli mix.. lol.. turns out good.. just follow the recipe

I make my kulfi the same way as CB too - no need for cornflour or bread (urgh!) as the milk thickens when it reduces. I do add cream sometimes as well which makes for an extra rich and smooth kulfi.

CB what would be the thickness like just before you freeze it? Can you roughly estimate how much the milk would be in milliliters?
@ spiral..if i knew to make it using splenda cuz m dad is diabetic. Or i would have gone with laziza or the recipe asking condensed milk.

I used bread, milk, sugar, badaam, evaporated milk.
It’s freezing now and nearly frozen. When it was runny it tasted too ‘bready’. I hope its ok once it sets.
also forgot to boil it with ilaychi.
I guess for a first attempt it is not bad.

Bread in kulfi?
Sounds weird. If you simmer it for long enough the milk will reduce and thicken itself anyway.

The first time i made qulfi after picking the recipe from Aj kya pakaya thread, my qulfi tasted bready. This time I checked laziza qulfi mix recipe, and it had bread too. I put it again n qulfi was fine.

My mango qulfi is in the freezer. lets see how that turns out. Yes i used bread again.
