I use , qorma , fish , nihari , and many other shaan masalas to cook daals . They do not even need tarka/bhagar to make them taste and smell good. Make sure you fry or bhonofy the masala before you add plain daal to it which you have already gala-o-fied(cooked ) seperatley, Try it sometime and you would love each and every kind of daal.
Because most people make very blend daal most of the time. No or very little mirch masala is used. They think since it is sada/simple khana it should remain that way. This is what has given daal a bad rep. Samajh a-e k nahi ?
When I make it, and now my wife too, we use lots of mirch masala , sometime with qorma masala , sometime with chicken tikka masala, sometime fish curry masala etc.
If you make it that way , I would not eat anything else.

Yes, the word khagina does sound more lofty than what the dish actually is, but I wouldn't use it for a girl's name, lol. I do enjoy the taste of it, it makes a very filling and healthy emergency meal. In my family, we add thinly sliced fried pototoes along with onions, tomatoes, dhania, green chillies, and seasoning, etc. But the potoates are the best part...and I haven't come across anyone who adds potatoes to their omelet.

yeah, i know...nobody does but sometimes my Bhabhii does add potatoes to Khaagina too...it makes it even more filling :) do you add a lil milk too to make it a bit fluffier? :)**
I thought we were the only ones too! My dad loves potatoes…in almost every form. He started the aloo in anda craze and now its a standard in our family.

for some reason, I used to hate daal when I was younger (before being married)… only started to like daal after I got married and learned that I can’t make biryani/pulao/qorma/karahi everyday…
now, sometimes ill make dal thats so yummy that ill have it as a thick soup…no rice or roti, just daal alone..
As a kid, I wasn't too fond of daal.....I liked the dark brown one better and found the yellow one plain. Then as a I grew older and even now...I like daal more. I like how it's another alternative to get your protein, iron, zinc....besides meat which can be unhealthy. I prefer the yellow chanay ki daal more than the masoor daal. It goes great with aalo ki tikkiyan and kababs. Maash ki daal...depends on mood...not overly crazy about it. And I like daal best when it's plain.....without any additions like kaddu and meat.
LOL, wow…:k: My dad used to say call it a spanish style omelet when I was a kid…I guess he was referring to the potatoes. When I looked it up…potato omelets are common in Spanish cuisine, but they make it sort of like a quiche, where the potatoes are baked and not fried. I also thought we were the only ones that did so…as never seen relos or friends make it that way. Can’t have it without potatoes now..it’s just too incomplete that way.
@KKF…I have thought about adding milk to it to make it fluffier and I might try it out.
Or put the kettle on to boil, and meanwhile take individual serving bowls, put some dry couscous in them, like 1/2 cup or so, then spoon some leftover salan or bhujia on it, and when the water is boiling, pour it on the couscous just to the top of the couscous (you'll have to get a handle on the ratio of water to couscous). Put a plate over the top while the couscous soaks up the water and the salan heats up from the steam. Done.
