Quick Recipes for a Large Crowd!

A crowd of about 15 people I’d say…list some fast dishes you make that are no fail!

Re: Quick Recipes for a Large Crowd!

for me chicken karahi, chicken achar, kebabs, vegie rice.

Re: Quick Recipes for a Large Crowd!

roasted chicken legs
mattar pulao
qorma
lasagna (two trays is enough for 15 people)

Re: Quick Recipes for a Large Crowd!

Nihari is always my go-to quick dish as it doesn’t require any cutting or chopping… I fry meat in oil, then add ginger garlic paste and fry few seconds. Then, I add shaan nihari masala and lots of water and let it cook. AFter the meat is cooked, I add flour mixed with water and let it simmer.

Another one is tandoori chicken as all u do is marinate and put it in the oven.

Achar ghosht and karhai chicken are fairly simple to. For me, browning onions takes the most time and effort so anything without it is easy for me.

Re: Quick Recipes for a Large Crowd!

pot roast! keep a batch of cut-up marinated chicken in the freezer so that you can break it out for such an occasion – add vegetables like potatoes, green beans, carrots, squash, peas, and let the sealed pot do all the work. it looks lovely and plentiful when plated up, too.

if you keep pre-boiled/fried mince frozen, you can whip up a batch of pasta with the mince and a faux-homemade sauce (use a jar of store-bought sauce and make additions to taste; grate cheese over the top to finish and stick it in the oven if you like, else serve it up straightaway.)

for quick, no-fuss desi sides, raaitas are great. just grill/oven roast your veg, season the yoghurt, and throw together. make a basic baghaar before serving and pour it over. they’re great to lighten up meaty mains.

Re: Quick Recipes for a Large Crowd!

I second nihari.
I don’t like cutting onion :bummer:
Matar or vege Pulao and chicken karahi.

Re: Quick Recipes for a Large Crowd!

Chicken Roast
Mutton Karahi (no onion needed)
Nihari (as others suggested)
Bhunna huwa qeema
Muttar/Chana Rice

Re: Quick Recipes for a Large Crowd!

Chicken curry
Qeema
Suji ka halwa
Muttar chawal

Re: Quick Recipes for a Large Crowd!

Chicken ka salan and dum keema.

Palak, daal, cook faster than bhindi, karelay and baingan.

Potato cultlets are pair well with veggie dishes.

Pasta dishes, even baked ones like lasagna or ziti. Add a salad and a bread and you’re good to go.

Stir-fries.

Dum ka Qeema (made from Shaan spice mix)
Chili Chicken (think of the one served at Chopal)
Chicken Pulao or Chanay ka Pulao
Aloo kay kabab

Daal Chawal, fried fish fingers, kachumber salad & papad

Zanzibari Pulao (a combination of Zanzibari fried fish, Zanzibari Chutney & Bhagaar walay chaawal)

Chicken corn soup
Chinese Chicken Chowmein

Basic house salad

Mango lassi

Re: Quick Recipes for a Large Crowd!

I made a lemon coriander soup. Refreshing and so easy and quick to make, less than half an hour.

Re: Quick Recipes for a Large Crowd!

Haleem definitely: the shan packet one: it would hardly takes about 30-45 mins to prepare without putting much effort.

another one is white sauce based pasta with grilled chicken.
Gola or malai kebabs: they are always quicker to make than shami kebabs because you don’t need to preboil the meat and daal. all you need to do is marinate your raw meat for 2 hours min and then you can bbq or simply deep fry them.

for dessert sawiyaan is fast to make but that’s not usually a hit item for dawats so probably you could try some icecream shakes or cold coffee for a quick dessert.

Re: Quick Recipes for a Large Crowd!

Omg I feel so inadequate! You guys call these easy and quick?

Um…my easy and quick is frozen pizza topped with desi masalas and meat. :frowning:

Quick Recipes for a Large Crowd!

Reha, Muzna’s selection is really easy! Muttar pulao, baked chicken legs or whole roasted chicken and a eggplant raita is very simple, easy and satisfying to make for 15 people. Add a salad and lasagna and you’re good to go.

Re: Quick Recipes for a Large Crowd!

brown bag pizza slices and throw at them.

chalti Machine ma hath dy dia na )
blah blah blah blah blah blah blah blah:biggthumb:

Re: Quick Recipes for a Large Crowd!

Haleem is quick and easy ?
Its cooked on low heat all night.

Re: Quick Recipes for a Large Crowd!

oh no, frozen pizza is not good.

You can have chapli kebabs made in advance, fry lightly and freeze. They are pretty easy to make.
Marinate chicken the night before so it’s one less thing to do on the day of.
Buy fresh naans and do a rice dish, whichever you find easier. I personally find biryani easy to make. My mom finds pulao easier. Pulao is definitely quicker to make but biryani is more popular for dawats
One saalan … whichever you are good at making… preferably with meat. If you make rice with chicken, then you can try mutton qorma for variety. Or the easiest chicken saalan to make is jalfrezi.
Raita + salad
Sweet dish … custard or kheer are quick. But if you’d rather not make it at home, you can always get cake and ice cream and serve with chai.

Re: Quick Recipes for a Large Crowd!

I usually don’t prefer the simpler menu but normally I make this if I have close family dropping by.

Plain zeera pulao
Chicken curry
Palak goshst
BBQ chicken drumsticks
Fruit trifle
