Re: Quick desserts
Ok all those asking for the *Dry Vermicelli recipe *.... this is the one I use :
4 tablespoons oil/butter
Nuts: almonds , walnuts, mishmish ( quarter cup )
300g vermicelli broken into short lengths
60g sugar
1 teaspoon cardamom powder
Heat the oil in a pan and fry the raisins and the nuts until golden. then remove with a slotted spoon
In the same oil fry the vermicelli until golden without allowing it to brown. ( make sure the flame is very low ) takes about 4 minutes ..
Add the sugar and mix well , again ensure the flame is really low ... Sprinkle in a few drops of water stir and cook until soft adding a little water as necessary. ( normally i add a teaspoon of water every few seconds .... but dont add water all in one go ...
when you notice tht the sugar particles have melted and the vermicelli is soft , ( takes about 10 minutes ) ...Take off the heat and stir in the cardamom powder.
The dish should be dry.
Sprinkle some dessicated coconut and serve ( optional)
Can be made richer with the addition of ghee and nuts.
yes bubble, its takes me just about that much time
… I can share my recipe if you wish … ![]()
^ please do!!
chocolate bread pudding is a quickie to whip up too! this is my recipe and short of winning me any awards, it gets raves everytime from everyone!
personally, i just throw everything together in one bowl, mix it well with a wooden spoon, pour it over the bread cubes, and throw it in the oven. easy peasy and SO delicious. to help the mixture thoroughly soak into the bread, i gently press down on the cubes with the back of a spoon to make sure it gets soaked. i make mine in a white oval pyrex dish as it looks pretty when serving it too.
Recipe: Paula Deen's Chocolate Bread Pudding (modified to eliminate the alcomohol)
Ingredients
1 (1-pound) loaf French or Italian bread, cubed (about 1" cubes)
3 cups milk
1/4 cup heavy cream
1/2 cup strong coffee
1 cup sugar
1 cup packed light brown sugar
1/4 cup cocoa powder
1 tablespoon vanilla extract
1 1/2 teaspoon cinnamon
6 eggs, lightly beaten
8 ounces semisweet chocolate chips- regular or mini size and you can vary these depending on how chocolatey you want. you can also do 4 oz of chocolate chips and 4 oz of raisins.
Directions
Preheat oven to 325 degrees F.
Lightly grease a 13 by 9-inch baking dish and place the bread in the dish. In a large bowl, whisk together the milk, cream, and liqueur. Using another bowl, combine the sugar, brown sugar, and cocoa powder and mix well. Add the sugar mixture to the milk mixture and mix well. Add the vanilla extract, and cinnamon to the beaten eggs. Combine the egg mixture to the milk mixture and mix well.
Stir the chocolate chips into the mixture. Pour the mixture over the cubed bread in the pan. Let the mixture stand, stirring occasionally for approximately 20 minutes or until bread absorbs most of the milk mixture. Bake pudding for 1 hour or until set. Check pudding by inserting a knife through the middle and it should come out clean.
Serve the pudding warm, or refrigerate and serve chilled with whipped cream if desired.
( its 4 am... why the heck am i still up?? :( )

Here you go ladies : *Rasmalai Recipe *
Keep about 7 cups of milk on medium flame. Bring it to a boil, then add one and a half cup sugar and a few cardamom pods. Lower the heat and let it cook. Rasmalai milk should never be too thick or creamy otherwise the rasmalai wont get cooked properly from the inside.
For the rasmalai balls :
Now in a bowl , take two cups powder milk ( please use a medium size tea cup )
add in one and a half teaspoon slightly heaped baking powder , one leveled teaspoon maida and mix the dry ingredients really really well.
Now melt two tablespoons butter and add that into the bowl and mix it well again using your hands. Then take two eggs and without beating them first , add into the batter and using your hands, carefully mix the batter until it comes in a dough like shape. Dont use any water ..if you have to ( like if its still a bit dry ) , then use a drop of milk.
Make small balls and then add them in the milk and cover the pot and change the flame to medium high. give it like three to four boils and then make sure to keep it on dum on very low fire ... The cooking will be like 10 minutes and you can keep them on dum for a godo 5 minutes.
