Chicken karahi is good.
My MIL makes a recipe .. basically chutney and chicken. She cooks the chicken in oil with salt and black pepper first. Blends together green chillies, dhaniya, mint and yogurt. Adds it to the chicken and cooks until oil separates, add red pepper flakes if u want and white pepper powder for ur desired spice level. It tastes delicious. And super easy.

I honestly do a lot of my cooking now by andaza, as does my MIL.
Use one whole chicken cut up into bits. Fry it about 1/4-1/2 cup oil, use salt here to ur own taste.. i'd start with 1/2 tsp and add more at the end if need be. Same with black pepper, 1/2 tsp. Once the chicken changes color and gets a little golden color on it, blend about 1/2 - 3/4 of a cup of yogurt with a big handful of fresh mint and fresh coriander, and about 5-6 green chillies (more or less depending on how spicy u want it). When it's thoroughly blended, add it to the chicken and bhoon until the oil separates, taste and adjust seasoning in the end. U can add a couple pinches of red pepper flakes and white pepper at the end to add spice.

no garlic or tomato?
does the finished salan look brown or green?
I think my MIL adds ginger garlic paste when frying, but i've made it without and it tastes delicious. The salan looks green, a brighter green color.
And no tomato or onions or red chilli powder or garam masala. The color needs to stay green. Adding other spices makes it look darker.

ive come across another similar recipe a while ago that used mint, cilantro, green onions, green chillies, yougurt paste. i havnt tried that one nor your version yet but planning too!
i imagine the green onions probably impart a nice flavor too. just wanted to share.

Isn't that the recipie for chicken hara dhaniya? I've tried that and it's really good!

I bake chicken a lot. Like a lot.
My go-to recipe is usually a marinade of olive oil, soy sauce, garlic, fresh black pepper, salt, thyme and basil. I let it sit overnight.
Next day, I will bake it up for 30 minutes covered at 350.
I also roast broccoli at the same time.
Its easy, simple and no mess.

Fry white cumin seeds, add chicken, chilli flakes, salt, blended tomatoes and bhoonafied. Add black pepper and put on dam. Done.
