I made home made quiche today and it turned out awesome. I'll share the recipe with you all...

1 cup all purpose flour
1/3 cup shortening
1/2 tsp salt
2-4 tbls cold water

Using shortening, flour and fork, mix mixture until you have round flakes. Add water as the last thing and add it slowly. Make a ball out of dough and then roll dough (like a roti), place into tart pan and pierce holes in the base. Bake for 15 mins at 350 degrees in oven.

For filling :-

2 large eggs
1/2 pint heavy cream or milk
shredded cheddar cheese (1/2 cup)
green onions, mushrooms, spinach
garlic powder, salt, black pepper and nutmeg (as you wish)

Brush base of pastry with egg.
Whisk filling and add into the dough pastry base.

Cook for 40 mins at 350 degrees. Allow to cool and enjoy with a fresh green salad !

I had major craving for Quiche when i was pregnant with my daughter....used to make it at home and have it for lunch....i followed the Delia Smith recipe which didnt contain any double cream or full fat milk therefore not as calorific!

The pastry recipe is out of Delia Smiths book and the quiche recipe i adapted from Gary Rhodes book called Great British Classics! Quiche is a real British thing to have. I love cheese and tomato quiche.

Cheese and Tomato Quiche

For the pastry:
110g plain flour
50g softened butter
pinch of salt
A little cold water.

Cheese and Tomato flan mixture
1 to 1 half tablespoons any vegetable oil
20g butter
1 large onion sliced
1 tomato-sliced up in rounds.
2 eggs
1 egg yolk
150ml skimmed milk
100g cheddar cheese grated-u can use half fat grated cheddar as well but i neva tried it with that.
cayenne pepper-only a bit
Salt and pepper

Pastry
Sift flour and salt into a bowl. Add the butter and rub into the flour with ur fingers until the mixture looks crumbly. Start adding cold water a little at a time and start mixing together. Once it all combines (add more water if u have to). Then put the pastry into a polythene bag and refrigerate for 30 mins (it'll make it easier to roll it out).
Roll the pastry out with a little dusted flour and then fit it into a flan dish. I normally grease it with a little bit of oil b4 hand. Once its fitted in the flan dish prick the base all over with a fork. Then brush the base and the sides of the pastry all over with beaten egg. (just use some of the egg which will be used in the filling later, instead of using another egg). U need to bake the pastry flan. Put into a preheated oven 190c or 375f-gas mark 5 for abt 25 mins. Check half way through if the pastry is bubbling up prick it with a fork and press it back down with ur hands. Once its done take it out let it cool down. This pastry mixture shud b enough for a 7-8 inch (18cm or 20cm) flan dish

Cheese and tomato flan.
Cooked the sliced onion in a bit of oil and once cooked let it cool down.
In a basin mix the eggs and the egg yolks together, then add the milk and leave to one side.
Melt the butter and oil together and then let it cool down.
Mix the grated cheese with the egg and the milk and fold in the onions cool butter and oil mixture. Season with salt and pepper and a little cayenne.
Reduce the oven temp to 160c/325f/gas mark 3. Pour the filling mixture into the pastry base. Then add the sliced tomatoes on top for decoration. Cook in the oven for 35-40 mins until the flan just sets. The quiche shud start to colour during cooking. If it starts to over colour, lightly cover with foil or greaseproof paper. Once its cooked, leave to rest for 20-30 mins b4 eating as it will help set the texture of the filling, creating a creamy taste-according to Gary Rhodes.

Sorry it was so long winded...i had to get it out of the book. Like i said this is the one i ate loads of when i was pregnant!
