Anything which consists of alcohol is haram to consume.

question is why? It goes great with some foods. And anything that enhances the basic fundamental experience of food can't be bad? I don't mean get drunk and bet up people - just a glass or two

In general, any intoxicant is forbidden. Yes, it is possible to take in moderation, but that policy proved to be a failure in general, as it itself cannot gaurantee that no single person will not get drunk.

I don't understand the principle behind "going great" with food...

what I mean is, like when you add 'correct' amount of salt to food it tastes good. similarly if you take 'correct' amount of red wine pasta tastes good.

I do concede it is easier go crazy with wine than with salt! :)

But is it specifically prohibited or just a custom?

Its just like saying- I once in a while flirt with girls not because I like it but because it adds some 'spice' to my married life.
