i made cutlets, and coated them only with breadcrumbs to fry 'em. hmm well … … they taste good on the inside, but the crunch outside couldn’t keep its shape. i know that coating htem with beaten egg helps … but i’m making these for folks who can’t eat eggs. so, if i cant use a beaten egg to coat the cutlets…is there an alternative way of making the cutlet keep its round shape?
