I think it’s normal for toddlers to get upset and bored on a plane for hours. It’s pretty normal for them to challenge you and demand to do things their way. It’s part of them discovering their world and figuring out who they are and how they are supposed to relate to others.
Of course you should correct their behavior, but you also have to pick your battles and consider the context. When a child is taken out of her comfort zone and is capable of disrupting 8 hours for herself, you, and all of the passengers, you need to let her be a kid, give in a bit. She doesn’t need to be disciplined. She needs distractions and interactions that can keep her happy and comfortable (so that everyone else can be happy and comfortable).
