Ok i have given up mutanjan till i find a recipe i like for it. And am now inclined towards biryani. I was going to make it like i usually do and use this new masala i got called Banne Nawabs. Its cost twice as much as the normal Shan Masala and i want to see if it really that worth it. Anyhow, the recipe on teh box is to make kachi biryani where you marinate teh meat mix and layer it on parboiled rice with fried onions and let the meat cook on dam.
Has anyone tried this method? Does hte meat cook thoroughly with no problems of kacha pan? I would totally appreciate the help that you guys can provide me.
yes, i have made kacchi biryani that way, i put it in the oven and the meat comes out really tender. i too was surprised the first time i made it.

Well i tried the kachi biryani this weekend and i guess it must be my shortcomnings but i was hugely dissappointed. The spice mix smelled great when the meat was marinating but the biryani itself wasnt spicy enough and it was alot less masala in the biryani then i was used to (since i didnt use tomatoes and a lot of onions). I dont know if i will ever try this again, i like the other way much better.
really... well i use my own masala, and it's quite spicy. don't give up on it yet, it really smells and tastes delicious.
what abt the meat, was it cooked through?

Yaar the spice mix was really really good but the onion and yogurt masala wasnt enough i guess. Its my own fault i am sure but i wasnt too impressed by it. And yes the meat was cooked through but i still missed the otehr kind of biryani a lot.
On the plus side, hubs invited someone from the masjid for dinner and since they were arab they enjoyed the non spicy biryani a lot. So it worked out in the end :D
