It's so hard breaking the habits of our parents who love their ghee and roti. But maybe if the doctor talks to her about how bad her diet is, that might help her. Also, encourage her to make this life change as a gift to herself. Who wouldn't want a makeover and shed all that extra weight. I'm sure she's not all that pleased when she looks in the mirror.
Also, what about making more soups? Desis are generally good with eating soups and those are pretty low cal. If all else fails, seriously consider a diet plan like Jenny Craig and Weight Watchers. They provide the food and it's pretty balanced.
it should not be just one person but the whole family on diet. i can understand your mum , not only her age but it hard to avoid roti and rice , if everybody else in the family is having those thing. I lost 17 kg only by changing my diet. ONe of the hardest " thing" was to avoid roti, rice , pasta or to have a little amount of it.
Put her on a south beach diet. Strict. It will last for about 2 weeks - the strict phase.
Then you can switch her back onto carbs after she’s lost a dramatic amount of weight, but good carbs.
You can get whole wheat naan at most desi grocery stores now - if not, have them order it.
Brown rice. Doesnt taste that good, but once in a while, she can have it.
Haath ki roti is very healthy. It takes a lot of time to make, I know, and its impractical in that sense, but you can try to make loads of it in one shot and then freeze them away. Also made from whole wheat, so it works.
With this diet, she can easily make stuff out of besan ka aata (like besan-based dhai bharey, etc). Besan is protein, not carbs.

I lost lots of weight, although, no I wasn’t heavily obese or anything. People lose 10-20 lbs easily on this diet, and keep losing, and it helps fine tune your insulin to get it working again.
its not just the type of oil but also the amout and usage of oil, I mean if yiu are deep frying stuff in olive oil then no matter how good olive oil s compared to other oil, its not goign to help.
So I can put her on this ‘South Beach’ diet and it will help her lose weight dramatically in 2 weeks?! I think this would be really motivating for her

Please do not put her on the south beach diet. Personally, I don’t think one should deprive of themselves of something they are used to their whole life (even for half a month as phase I suggests it). Sure no-carbs (no fruits either) for two weeks helped me lose 10-12 lbs the two times I tried, but it left me wanting more food after the two weeks were over. In addition, losing that much weight in such a little time is unhealthy anyways.
Calorie counting is the best. I am sure it won’t be hard for your mom to find friends who are trying to lose weight as well.
