Recipe that I follow
and the Pulao turns out amazing.
Which meat are you using. The best meat for Pulao is, Lamb or Goat, seenay ka gosht. That’s what I use in Pulao. It gives the required grease a Pulao is known for.
In one Kg meat, add 6 1/2 cups water (the quantity of water is always as same or a little more as the quantity of rice).
Now add, one big (not too big), onion, chopped in cubes or what ever you feel like, a fine chopped is not required.
Add about 6 to 7 seeds of garlic, 2 cubes of ginger, each should measure around one inch.
Salt, 1-1/2 heaped teaspoon.
10 Cloves
15 black peppers
2 big black cardamoms
2 bay leaves (tez patta)
2 cinnamon sticks
2 green cardamoms
1 table spoon sufaid zeera
1 table spoon saunf
1-1/2 tablespoon saabut dhaniya

Give it pressure. I use pressure cooker for it. My meat takes around 10 minutes to tender. Have a check on the time accordingly.
If using degchi, You can add more water because the water evaporates. Just make sure, when the meat is tender, the remaining water should remain as the same quantity of rice.
Soak Rice.
When meat done, separate the meat from the yakhni and drain the yakhni, keep the stock and throw away the masalay. Masalo se achi tarha rass nichor lena taqay sara araq stock main aajaye.
Finally chop 6 to 7 medium sized onions.
Fry in a another degchi, in which you will cook the Pulao.
When medium done, add one bay leaf, 1 teaspoon zeera, 1/2 tspn saunf, 1/2 tsp sabut dhaniya, 5 cloves, 10 black pepper, one big cardamom, 2 gree cardamom, 1 big cinnamon stick.
When the onion turns golden (not too much golden), add 1/4 cup water from the yakhni, and now add meat and 1 teaspoon salt and bhoonify it.
(The quantity of oil when frying onion should be 4 cooking spoon. )
Add about 7 to 8 green small chillies and 1 tablespoons of ginger garlic paste. After a lot of bhoonifying, when you see the oil has been separated, add around 6 cups of stock you made from Meat. Use the same cup that you used for measuring the rice.
On boil, add rice, taste the salt, salt should be slightly strong. You should feel a yakhni taste.
Cover with lid, let it done on high flame, keep checking the rice after every minute.
When water is evaporated, level the rice again and cover it, let the flame high for 2 minutes and then slower it to dum for 5 to 7 minutes. Keep something heavy on the lid, I use Batta for it (Sill Battay ka Batta).
After five minutes, check it back. It should be done.
Serve with Raaita and Salad and Achaar and anything you like ![]()

Queen, 6 cups chawal mein meat kitna ho. Aur yakhni kitnae cup honi chahyeh? Jab mein banati hoon chawal mein flavor nahi ata

The above recipe is according to the 6 cups rice. I have mentioned every ingredient keeping in mind 6 cups of rice already.
1 kg is good enough in 6 cups rice. It also depends on persons. Mere ghar main normal gosht khaya jata hay, so I add around one kg in 6 standard cups, I know a family jo mashAllah bohat gosht khor hay, they require a lot of botiyan in every niwala…lol, they add around 1 and half or almost 2 kg meat in 6 cups rice ![]()
agar tumharay ghar main km gosht khaya jata hay to tum 1 kg se km gosht bhi le sakti ho 6 cups rice main ![]()
Zaiqa isliye nahin aata kyunke stock main jo masalay daltay hain tum un pe halka hath rakhti hogi. Wo bhar ke daalo. Unhee masalo ke arq se Pulao main khusbhu aati hay. ![]()
Seenay ka gosht is the best for Pulao. Usme thori Charbi bhi hoti hay… Bohat zada charbi bhi mat use kerna, heek ajayegi. Bs seenay ka gosht theek hay. Kuch log leg piece ka bhi banatay hain and charbi ke tukray alag se add kertay hain, usme charbi ka ratio theek nahin rehta, kabhi zada kabhi km hojata hay. Seenay ke gosht main alag se charbi nahin daalni paray gi, wo botiyo main hi chipki hoti hay.

One more tip, it has been noticed ke Qurbani ke gosht main bohat strong smell hoti hay, due to its freshness. Make sure to wash it well. Kuch der ke liye gosht ko namak ke paani main bhigo dena, one teaspoon salt kaafi hoga, pani thora luke warm ho, 10 min ke baad is bheegay hoay gosht ko achhi tarha dho lena. takay sara namak bhi drain ho jaye and uski bohat strong smell bhi khatam hojaye.
Normally aisay na dhona. ye sirf qurbani ke gosht ke baray main keh rahi hun kyunke usme bohat zada heek hoti hay… bohat taza honay ki waja se.

Acha sahi thank u so much. Yaar masalay tu sahi dalti hoon khair acha yakhni kitni ho at end when i measure for 6 cups of rice should be 12 or 11 1/2 or 11 cups?

Yakhni utnay hi cups ho jitnay cups rice hon.
Agr 6 cups rice then 6 cups yakhni
agar 8 cups rice, then 8 cups yakhni,
Agar 10 cups rice, 10 cups yakhni…
provided you soak the rice for minimum 20 minutes and no more than 30 minutes.
Kia tum gosht ka pulao pakati ho? Charbi ka bhi koi role hota hay pulao main. uss se bhi khushbu aati hay. Meri recipe se pakana, Kese nahin aayegi…iska to achha bhi aayega ![]()

its ok. main ne bhi seekha hi hy aur aisay stupid questions hi poochay hain. there is nothing to be embarrassed about, isi tarha aata hay.
Well, haan haan chawal gal jayengy. dont worry. jo aur jesa kaha hay wesa hi karo. Lagta hay ke chawal nahin galenge etc etc but jb dum dogi to sab theek hojayega.

bus yakhni aur rice measure kernay wala cup SAME hona chahiyeh. Jiss se rice measure karo, usi se yakhni measure kerna.

And if you like a change, you can try this green pulao!
1 Kg mutton
Fennel green - one big piece of abou 200 grams - finely chopped
Green coriander - one bunch - finely chopped
Green chillies - 12 finely chopped
Garlic whole
Black illachi - 4
6 cup water
Boil all this stuff for 2 hours. Then take it out the meat and blend rest of the stuff and squeeze the garlic.
Fry 4 onions in oil and the separate it from oil and add some garam masala (whole - with bay leaves) and meat and fry it for few minutes and then add pre-soaked rice (4 cups) and then add back the yakhnai (6 cups) and cook and when almost done simmer for10 mins and if you like add kewra and zarda colour.
