Puff pastry

hi guys i m total new to cooking. today i tried making puff pastry ( i want to make it like one which we get in Greegs) well i make with the aloo filling the problem is it didnt turn out as i want it to be the end result is just like when u fry a spring roll it is not like the pastry :frowning: i want something like this

What pastry sheets did you buy?

The easiest way to make puff pastry is to buy a block pr sheets of “jus rol” - it will be in the freezer section in the supermarket. If you buy the block, you just break some off and roll it out and make the shape as you want. You then bake it in the oven.

The only pastry I make from scratch is for things like quiches.

yes i buy pastry from super market dont remember the name right now and i follow the method as you mention i take sheet off from the roll add the filling and bake it in the oven but the result was just like spring rolls not that exact look of puff pastry. i will try jus roll from asda now.

I think perhaps you were using regular pastry sheets and not puff pastry.

yup I agree with Stoppit, I think you used the wrong pastry sheet...

Either that or there could be another reason ... you have to prepare the puffs quickly before the sheet defrosts .. and then place them back in the fridge for a few hours ( covered ) ... and then bake .. you will get perfect puffs ...

Gemini, I got your query ... but responding here so others can benefit as well ...

The sheets that you are using are not puff pastry .. they are ordinary pastry sheets that we use for spring rolls or samosa's ... if you look in the shops again and try to find puff pastry rolled sheet .. its normaly one thick sheet .. that can give you between 6-9 pastries ....

another good tip is to start the pastry with the seam side up, and then half way turn them over. This will stop the boton from getting flat and soggy

Gemini, if you try to wrap the spring roll sheets one on top of the other , hoping that you will get the puff pasty, then buddy you are mistaken , the puff pastry is a very technically detailed layering of butter and flour ... it cannot be achieved with just rolling ordinary sheets one on top of the other .. you have to make sure that you get the puff pastry sheet for achieving the greggs pastry look ...

i use the tenderflake puff pastry dough and it turns out perfectly each time. you let it defrost a bit, roll it out with flour like you would roll out a roti, cut it into rectangles, fill it, roll it up and press down on the seam to seal it, brush with a beaten egg and bake for 25 minutes. its perfection and an absolute staple at home during ramadan. we fill it with qeema and cheese usually.

I think you may have used shortcrust pastry. I make quite a few things with pastry, pasties and pies, and always buy puff pastry. It turns out brilliant and just perfect.

Make sure you preheat your oven to 400 degress Fahrenheit before you put your puff pasties in it.
