Provincial styles of cooking?

So when I was young I always used to hear my grandmother tell the help how to cook basic dishes with a punjabi method (I think the cook was from sindh). I never quite understood what she meant by that. Are there different methods for cooking similar dishes from various provinces? i.e can you cook chicken karahi punjabi style or sindhi style? I remember it had something to do with the basics of cooking, she would say punjabis put all the ingredients in at once or something but I’m not quite sure. Has anyone ever heard of this? If so what are the differences in the styles?

Re: Provincial styles of cooking?

hmmm I believe there would a little variation in recipe. I am a punjabi but I have never heard the punjabi style though we do have some recipes of our own like saag and makai ki roti . I am sure sindhis and other communities have their own specialities like memoni food in memons. But more or less all are same.

bhindis are made differently in sindh than punjab......they stuff it with spices cooking them whole

huh, i guess i don't know what my grandmother was talking about then.

Re: Provincial styles of cooking?

basic punjabi style of cooking is u put together all the ingredients and let it cook , while in the end bhoon it , its specifically is true for vegetables , on the other hand in meats u cook meat putting everything , bhun it and then add other stuff like vegetables .
other styles include u redden the onions , bhoon the masala , and add ingredients gradually . hope that makes sense !
