So mummy who is an amazing cook and taught me everything I know HATES the use of pressure cookers unless its for thinks like channa/kala channa or daals.
She says khanay ka zauq kharab ho jaata hai.
But many people I know swear by their pressure cooker.
i dont use them.. not even for daals or channa's... takes much longer without the pressure cooker but i think everything turns out much better without them ... but i know my mom uses her's and is done cooking in no time... if your short on time i think its a good idea to use it , in my case i rather not
I don't even know what to do with a pressure cooker. My mum hasn't used one since I was a kid. She says there's no need now cos even the daals cook much easier than they used to. She just has lots of different pans and woks, including cast iron and glazed clay (for saag).I agree with the time thing, that's one advantage I see when my MIL cooks.
My mom says the same.She only uses it for a few things and believes in a very systematic,step by step approach to cooking which does not involve the pressure cooker..
I use the pressure cooker way more than my mother does.Like for example,she makes chanay ki daal with gosht over slow flame,which takes about a few hours.I,on the other hand make it in the pressure cooker and dump everything altogether.It really makes a difference...hers tastes way better.
Similarly my MIL even makes chicken in the cooker..although it tastes fine,but the one cooked in a regular pot over an hour tastes better...
i've never used a pressure cooker in my life. Mom used to use it before i was born so i just never had a chance to use it. so because of that i dont even feel the need to use it.
^ I cook them in the pressure cooker for 10 mins...and then check them...then I give it another 10-15 mins and check them again - and this way I can prevent them from getting mushy! But I've worked out that white round channay daal needs at least 30 mins pressure.
