Muniyas thread has me thinking about shortcuts and advance prep on the kitchen.
Out of curiousity does anyone prepare their handi masala and keep it in the fridge for use later on? How long will masala last for in the fridge?
Same question for pilau masala- I am thinking this will last up to 5 days if it has cholay in but less if it was vegetables, meat, poultry.
Also someone on here said they cook daal and keep it in the fridge and apply a tarka on the day they are serving it. How long does cooked daal last in the fridge? I was under the impression it wasn’t good to eat after three days.
Sometimes we just don’t have freezer space sp a nicely stocked fridge could be the next best thing.

I never freeze such things but sometimes use to freeze chicken and mutton stock which lasts good for 2 weeks. Regarding other masala what my naani used to do was she used to brown onion without putting any masala and used to keep it in transparent bag dividing according to the salan. When immediate guests used to come she just put masala in them and make salan.
I never kept daal in freezer but haleem yes, however i think haleem also wont be that good after a month coz sometimes the shredded meat does not taste what is the original essence of it.
I used to keep pizza topping in freezer and it can last for like a month easily.

I just freeze components of dishes and keep them in my freezer. I always have : fried onion paste (I blend my fried onions since I don’t like them in slices in my handi) tomato paste, garlic paste, ginger paste, chicken stock.This way if I need to cook a handi I just have to combine all of them and add the meat.
I’ve kept dal in my fridge for upto a week but its probably better to eat it sooner. If I end up cooking too much dal I just freeze it in batches so it doesn’t go to waste.
