Potluck - Cold (non-heat) Entree/Main

Hiya people,

I need some potluck ideas. I have several limitations:

  • no salads or desserts (the others are bringing those)
  • needs to serve at least 20
  • can’t re-heat (the microwave is tiny so serving dishes do not easily fit inside)
  • if it’s a desi dish - can’t be too spicy

So what would you suggest as an entree that can be served cold or room-temperature and I can make the night before?

Thanks in advance!

Re: Potluck - Cold (non-heat) Entree/Main

Hummus as an appetizer cab be served cold or at room temperature

Cold sandwiches as an appetizer (chicken and mayo sandwiches, or cheese and tomato, etc)

Kababs (although that might require at least one heating)

You can try making chilled soups.

Pastries stuffed with meat or potato (not heating will not be such a big deal)

Various chutneys or raitas can be served cold (you can make a couple)

Mashed potatoes?

Appetizers or desserts would be more suitable if you want something that's room temperature. There are so many options for desserts. Desi desserts such as kheer, meethay chawal, ras malai, shahi tukra, gulab jamun, halwa. Non desi desserts such as cake, cookies, brownies, ice cream sandwiches, puddings, etc.

You can even try to be "different" by making a punch and taking it with you. Or assemble the punch shortly before guests arrive.
