Potatoes

What is the difference between red, white, idaho, and yukon gold? We’ve only ever used idaho as far as I know. Which ones are best for salans and aloomethi, keema aaloo and the likes?

good question...I'd like to know the answer as well.

I personally havent noticed the difference in taste. The only difference I have noticed is in size, color and that some cook faster then others.

i love red potatoes.. i only use red ones in anything i make.. be it mashed potatoes or fried ones or potatoes to be used in salans.

The difference is mostly texture. Red potatoes are less dense, easier to mash when boiled. Yulon gold are denser and have a golden color, they look very nice when roasted but a little strange when they're whipped (yellow mashed potatoes?). White potatoes are really dense, they're great for potato salad. Idaho potatoes are the best for making baked potatoes.

yukon gold are best for making mashed potatoes... so yummy! just add some milk and butter to lighten up the color, mama... they turn ivory and fluffy.

lol I love them too as mashed! I did have some guests who didnt like them cause of the color but heck man just pour on the gravy!!!!

I do find the red potatoes to be great for roasting with meat.

i love the little tiny new potatoes or french potatoes... the ones that are as big as a bite and perfect for bbq'ing.
